Efrain’s Magical Mexican Food (Fit’s Restaurant Review)

I think we may have found one of the best Mexican spots in Boulder. Yes, I’m excited too. It’s a little out of the way, but it’s a scenic drive through the Wild West (it seems like). You pass these old rusted buildings, lots of old mining spots, and such. Anyhow, we get there one night, and it’s packed. And it’s a Wednesday! Obviously, this place was popular. And it had good reason to be.

The spot is called Efrain’s II as in #2. Yes, weird name, but there are actually 3 of these wonderful restaurants, one in Layfayette and Longmont as well. They obviously saw the good fortune in expanding, and boy are we glad they did! We get there around 7:30-8pm and wait for a table for around 20-30 minutes. I had a margarita while we waited and we watched some baseball. I was surprised how busy it was because it was a Wednesday. Come on, people! But it was a good sign. Chris had gone there with his friend a few weeks earlier and had wanted to take me because he knows my fervent love of good Mexican food (helloooo, I grew up in SoCal).

Great margarita!

Once finally seated, they were quick to serve us with some chips and salsa. The bad thing about this is that there were endless refills. So yes, I obviously filled up on chips and could barely eat my meal. No surprises here, folks! As I sipped away on my margarita, Chris got a Mexican Coke (he loooooooves them). He ordered the Steak San Lorenzo (a sizable meal that even he couldn’t finish) and I ordered the fajitas. Vegetarian, of course.

I couldn’t believe how big my portion was. For my fajita platter, I received three tortillas, a huge plate of lettuce, tomatoes, cheese, beans, rice, guac, etc. and a huge pot of fajita-styled vegetables. I couldn’t believe it. Everything was cooked well with lots of flavor. Chris thoroughly enjoyed his steak and we left a happy couple. The atmosphere is kinda hectic, but once you get seated, you’re in your own happy bean-and-cheese world. I can’t wait to go there again and again. Good Mexican food with a good price? Don’t mind if I do. Load up on Mexican food to stay hungry and fit!

We’re Baaaack (Sorry!)

We have just arrived back from a nice 5-day vacation on the magical East Coast! We went out to visit Chris’ family (he’s from New Jersey/New York) and also see some friends. We had planned to prepare posts for each day ahead of time…but obviously that didn’t work. We have a little pathetic excuse, that there was no wifi we were able to get onto in the house…but still, sorry! I hope this post of deliciousness and friends will help you forgive us. It will be picture-heavy and text-light.

It was an early start to the Wednesday of us flying out–6:30am flight called for a 3:15am wake-up. We drove the car over to the airport and had a nice smooth ride, stopping briefly in Minneapolis before arriving at Newark. Since everyone who could pick us up were working, we decided to take it slow and just take public transportation back to Chris’ town, Midland Park, New Jersey. We got to the train station, his mum picked us up and we had an early first dinner of some good Chinese food. Two hours and a chiropractic appointment later, we had another dinner with his brother at a great thin-crust pizza. We finished that night off with some great Van Dyk’s ice cream and played video games all night with a good friend, Po.

Po & Chris, ice cream buds

On Thursday, we wake up bright and early (not getting much more than 5 hours sleep…who sleeps on vacation, right?) and pack in the car with Chris’ mum to visit Chris’ sister in Pennsylvania, right outside of Philadelphia. And grabbed delicious bagel sandwiches on the way! It was a great day of relaxation, visiting Chris’ niece, adorable puppy, spending quality family time, and watching movies like Hotel Transylvania and Puss in Boots. We didn’t get home until around midnight and collapsed right to sleep.

On Friday, it was another early-wake-up day for us because we were visiting the city–New York! We had a great day seeing lots of friends from college. We found our way to my friend Mary Kate via bus and had a great breakfast with her before she headed into her super awesome 60 Minutes work. Then we took the good old 1 train uptown to the college where we met, Manhattan College. We got to meet up with some friends who still are attending, some who drove in for the day just to see us, and our old bosses. Chris got to fit in a leg workout while I hung out with my old JustPeace (a social justice club I led) club while they held an event. I got to see Kathleen and Hilary here.

After that (still Friday), we grabbed Kathleen and kidnapped her back downtown where we forced her to see The Grandmaster (review coming soon), which was pretty epic at one of our favorite indie theatres at Lincoln Center. We walked around Central Park for a bit before walking down to the famous Halal Cart which came from humble beginnings but is now 3 carts deep. We chowed down on some platters and then met up with Allan to go to the Yankee game. It was a lot of fun and we got great seats! Pretty good game too–2 of Chris’ favorite players hit homers. We then got a ride back to New Jersey, had some ice cream, then went to sleep.

On Saturday, we actually slept in! All the way until 9am! I know–crazy. While we waited for our friend, Allan, to wake up, we went and visited Abma’s Farm for some baked goods and sheep humor. After that, and he still wasn’t up, we went to the local Wildlife Conservatory which has beautiful paths and only animals that need rehabilitation. We finally met Allan, Jane Kim (a friend of Chris’) and her boyfriend at a new place in town for “brunch” (…at 12:30pm). Although we were wary about prices and reviews, it turned out to be delicious and a great time! We walked around town afterwards, got some boba, and hung out at the Ridgewood Park. We then grabbed a Tony’s Pizza to eat the next day (because they would be closed on Sunday). Later that night, Chris’ whole family went out to hibachi and it was delicious! Then after, we of course got more ice cream and went to sleep.

We have another late morning wake-up on Sunday, this time around 8:30. I decide to go for a easy-paced run in the morning while we get started on the day. We basically spent the entire day visiting Chris’ many aunts and uncles–it was really nice to meet all of them as I hadn’t met many before. That night we met up with Pablo and Brit (Chris’ close friends) and we drove 15 miles to go to East, a restaurant with sushi on a conveyor belt. Delicious! We then watched Here Comes the Boom (surprisingly awesome movie) and, of course, got some more ice cream.

Now it’s Monday, and we’re wondering how this vacation is already over! However…our flight wasn’t until 7pm so we had a good amount of time to spend with friends before we took off. We had a nice breakfast with Pablo and Brit that morning while we waited for Allan and Po to roll out of bed. I got way too much food…brie-stuffed french toast, eggs, home fries, and toast! We then meet up with everyone else and to everyone’s disappointment, Chris coerces us to go see the Percy Jackson movie. Okay maybe not coerced, but reactions were definitely amusing. After that movie, we all piled into cars and rushed to Mitsuwa (which will be getting its own post), which is a magical place that makes you feel like you’ve stepped into Japan. Once we gobble down some delicious food, Allan is nice enough to take us down to JFK in Labor Day traffic. We owe him a big one.

Brie-stuffed french toast. yup.

And that was our trip! We had a pleasant flight and watched Great Gatsby (review coming soon) to make the 4.5 hours go by quickly. We are still catching up on sleep, and apologize again for the lack of posts, but here we come on full throttle! I’m probably forgetting a lot in this post, but I did what I could from memory! Make sure you travel to stay hungry and fit!

Sweetie-Pie Peach Cobbler

Sweetie-Pie? Huh? I say that because this recipe is sweet. Very sweet. So much so that I’m not a huge fan of it, but those who I made it for loved it (and that’s what matters, right?). At first, I thought I had done something wrong, and I was ready to angrily toss it in the bin, but I left it in the fridge overnight and it turned out great! Anyhow, this is a peach cobbler from this blog. I didn’t change much out of the recipe because I’m kind of new to cobblers. Alright, let’s take a look.

  • Prep Time: 15-20 minutes
  • Baking TIme: 20-25 minutes

photo 4 (10)

Ingredients

  • 1/2 cup unsalted butter
  • 1 cup white flour
  • 3/4 cup white sugar
  • 1 cup milk
  • pinch of salt
  • 1 tsp vanilla
  • 1/3 cup brown sugar
  • 1 tbsp baking powder
  • 4 peaches
  • juice of 1 lemon
  • 1/2 cup oats
  • 2 tsp cinnamon
  • 1/3 cup brown sugar (yes, it’s on the ingredient list twice)
  • 1/4 tsp nutmeg

Directions

  • Pre-heat oven to 375 degrees F. Put the stick of butter in a few-inch-deep pan, like a casserole dish and let it melt in the oven.
  • Let’s start with the batter. I’m not a huge fan of the batter–it’s very typical white cake type stuff. But again, other people liked this! Combine the flour, white sugar, baking powder, and salt.

photo 1 (12)

  • Add the milk and vanilla to that dry mix and stir. Set it aside
  • Get out a pot and put in the peaches (they should be chopped up in little chunks), brown sugar, lemon juice, and cinnamon. Bring to a boil and then let it boil for 5 minutes.

  • Pour the white batter into the casserole with the butter in it, but do not stir! Make a nice layer and then pour the hot peach mixture on top too, for a delicious, beautiful layer
Ready to bake!

  • Bake for 10 minutes.
  • While it’s baking, combine the oats, the (other) brown sugar, and nutmeg in a small bowl
  • Take the cobbler out and sprinkle the oat mixture on top. Put back in the oven for 10-15 minutes until it’s nice and brown on top and cooked through

You can serve hot with ice cream or chill it in the fridge for a nice cool cobbler. I would go for the latter. The more I kept trying it over time, the better it became. And it was perfect by the time I brought it to work. Two people had birthdays within the next two days so we decided to do a little birthday bash for them. One of them is picky about desserts (doesn’t like sweets), but mentioned that she loves peach cobbler so I gave it a go! I also made these muffins. And as always… stay hungry and fit!

The How-To Guide to Smart Snacking

I’m pretty sure all of us have fallen into the trap of mindless snacking. It’s one of the biggest road blocks in achieving our goals. We get home from a long day of work, our stomachs grumbling, but our feet are tired and so our minds. Instead of whipping up a snack, we go into the fridge or pantry and just mindlessly stuff our gobs until we somehow feel full. But usually we go past the point of being full, to where the point of not eating a good dinner because of that. And what does that lead to? MORE mindless snacking after “dinner.” If you can’t tell, this is a bad cycle. So how do we stop it?

Fruit protein smoothies: stopping mindless snacking since its creation

Fruit protein smoothies: stopping mindless snacking since its creation

Snack with a purpose. I can’t emphasize this enough so I’m writing a whole post about it. This is the best defense against the mindless zombie eating that can plague us all. It’s so easy to fall into the trap of “oh, I’ll just snack on a few crackers while I think of a food plan—oops there goes the entire package.” I can’t count the number of times I’ve done this (yikes), but I’ve learned now, how to beat that back with a stick. A well-planned and satisfying stick.

Popcorn, cheese & crackers,

Popcorn, cheese & crackers,

What exactly is snacking with a purpose? It’s the opposite of mindless eating and I can’t tell you how much more satisfying it is than just stuffing your face. If you snack with a purpose, you have a plan. A plan to satisfy your hunger without going overboard and getting some nutrients to boot! It may take a LITTLE more time (and I mean little), but that is also a way that makes it that much more satisfying. Just like growing your own vegetables, when you snack with a purpose, you feel good.

Egg on top of avocado

Egg on top of avocado

Snacking with a purpose means you don’t go straight for the chip bag. Instead, you have something in mind for a snack. Yesterday, I was craving something cold and refreshing. I wanted to go grab an iced mocha latte or something, but didn’t want to spend money and drink a bunch of sugar. So I bit the bullet, went home, had some chocolate milk beside a Van’s waffle topped with greek yogurt. Perfect snack for after work or after school. You have some sugar in the waffle and milk to pick you up, the protein in the greek yogurt to keep you going, and the cold chocolate milk to refresh you. It’s well-rounded, simple, and took less than 5 minutes to make.

A little more extravagant version of my example

A little more extravagant version of my example

Starting to get it now? Snacking with a purpose means sitting down and eating something to keep that body and mind of yours going. It means slowing down for 10-15 minutes, making yourself some cheese, apples, and crackers or popcorn or an egg on toast to satisfy hunger and give the body what it needs. And the mind. You think your mind is happy when you shovel crap down your throat? Absolutely not. One of the reasons why we love eating is because it is pleasurable. So why skimp out on that just because it’s a snack? Make something nice for yourself, sit down, and enjoy a snack. Your body, your weight, your fitness, and your mind will thank you. Snack with a purpose to stay hungry and fit!

Best Veggie Burger in Town: Mustard’s Last Stand (Boulder, CO)

Mustard’s Last Stand ALSO has great meat burgers and hot dogs–they are from Chicago, after all. ESPECIALLY, the hot dogs. I, however, will be focusing on their vegetarian options as…that’s what I eat! However, from Chris’ input, he’s usually always satisfied with their burgers, full of flavor and gets him satisfied. Alright, let’s look at the place!

According to our friend, a Boulder-native basically, Mustard’s has been in this same spot since before he can remember. It’s pretty tiny inside, but you can eat outside too and enjoy the day. They even offer blankets you can use to go sit by the creek that’s extremely close by. We do that sometimes, or we’ll just go to town right in the shop. The servers can be brusque, but we don’t mind, as long as we get our food. It’s best to go to non-peak hours, unless you want to be crammed in that tiny place, but you gotta do what you gotta do. The wait time is medium to long, but for me, it’s worth it.

I’ll start off with the fries. The fries here are delicious. I don’t know what they do to ’em, but the seasoning and the way they cook them make them delectable. They have that perfect crispy exterior that makes you dig for more and more. Let’s move on to the burger. And remember…we’re talking veggie burger. More specifically…the tempeh burger.

The tempeh burger

The tempeh burger

What is tempeh? It’s a soy product that comes from Indonesia and has plenty of protein for us vegetarians. You can read more about it here. Alright, back to the good stuff. This burger is definitely the best veggie burger I’ve ever had. The texture is right, the flavors are out of this world, and the condiments are perfect. They serve it with ketchup, mustard, pickle, onions, hot peppers, and sauerkraut. I think next time, I’m not gonna get the sauerkraut (I usually don’t, anyhow), because it overtook the flavor of the burger and the cheese. And the hot peppers could be a bit hotter. But those are my only complaints. The slab of cheese they throw on there is real and you can definitely tell. It’s a melt-in-your-mouth kind of experience, and one I always enjoy going back to.

Mmmmmm-mmmm!

Mmmmmm-mmmm!

Mustard’s Last Stand will always be a place I enjoy going to. It’s a local joint where both Chris and I can get equally satiated without feeling left out. He gets his meat, I get my tempeh, and we split the fries (but we always wish we had gotten two orders). Mustard’s has something for everyone and they never skimp on the flavor. The price is decent too. Hit this Chicago-joint up to stay hungry and fit!

Almost-S’more Banana Cookies [3 Ingredients!]

After a nice light workout, and a delicious post-workout dinner at Mediterranean Market (one of our favorites), I wanted some dessert. I had eaten pretty light at dinner (it’s so easy to stuff yourself there with delicious falafel), so I was ready for a little dessert. Our favorite Mexican bakery was closed, and we’re both too congested for Glacier (best ice cream in town). We didn’t have much dessert food in the house (besides some squares of dark dark chocolate), so I decided to just make some! I remember seeing this recipe, and it was so simple and easy–the perfect cookies for tonight. And they have good macros to boot (aka pretty healthy)!

I'll take three, please

I’ll take three, please

Why almost-s’more? Because I’m not using any marshmallows. A) Because they have gelatin in them and sometimes horse hooves are used for that, but let’s be honest and turn to B) Didn’t have any in the house. Alright, let’s get to the recipe!

  • Prep Time: 3-5 minutes
  • Bake Time: 13 minutes
  • Makes: 6 cookies

Macros (per cookie)

  • Calories: 116
  • Fat: 3.5g
  • Carbs: 20g
  • Protein: 1g

Ingredients

  • 3/4 cup ground graham crackers (I had the cinnamon kind–yum!)
  • 1 banana
  • 1/4 cup mini chocolate chips

Directions

  • Set oven to 350 degrees F
  • So I tried lining up my baking sheet with parchment paper and it didn’t turn out so well for my cookies. Try just buttering or oiling your baking sheet instead
  • Crush up your graham crackers. Put them in a ziplock and roll a rolling pin over them to get ’em nice and grounded
  • Mash your banana well in a mixing bowl
  • Mix the rest of the ingredients in the bowl
Yum mixture

Yum mixture

  • The original recipe made 8 cookies, but I think perhaps I made mine a bit bigger than her. So plop your cookie dough on the baking sheet any way you would like. They don’t really expand, so style them how you want them to turn out! Remember this isn’t a normal cookie dough texture
Ready to bake!

  • Bake for 13-15 minutes. Mine were promptly ready at 13. Take out and let cool for a few minutes (I know, that’s hard).

Oops didn't wait long enough

Oops didn’t wait long enough

How easy was that?! It took no time at all…well, it took some time for me because we got caught in the middle of a Monk marathon (best show ever). These are guilt-free cookies that don’t break the money bank or time bank. I know I’ll be using this recipe frequently when I need a dessert fix or a last-minute needed dish for friends. Use this recipe to stay hungry and fit!

No-Bake, No-Sugar Chocolate Peanut Butter Cookies

Woah, what a title. Are you out of breath? Well you should be, because these are delicious. I took the recipe from this blog (which I think will be a new favorite of mine) and took out the sugar and reduced the butter. The other day, I was simply craving to bake something, but we didn’t have many ingredients in the house. We did, however, have these ingredients. This is such an easy recipe to make such decadent cookies. And you don’t even have to turn on the oven! Amen to that for hot summer nights.

Piled up, ready for eatage

  • 1/4 cup heavy cream (or whipping cream)
  • 3/4 stick butter

  • Use an ice cream scooper (this is the perfect way to do it!) and scoop a ball of each and plop it on your baking sheet.
  • Once they’re all lined up, let them cool for a bit and then put them in the refrigerator for at least one hour.

And that’s it! Pretty simple, huh? I give thanks again to OMFG So Good (brilliant blog title too) for bringing this to my attention. And by bringing, I mean I hunted the recipe down. These are very decadent cookies, rich with the mixed combination of chocolate and peanut butter (Reese’s, anyone?). That is a combination I can near never refuse. This recipe has plenty of protein, fiber, and unsaturated fat to keep you satisfied in the afternoon! Use this recipe to stay hungry and fit!

Restaurant Review: Dagabi Cucina

For one of our celebratory dinners, we decided to go to Dagabi Cucina after a little debate about where we wanted to go. We’ve been eyeing this place for a while (and I can’t help but call it Dagobah), so we decided this was the night to go. To celebrate our promotions and hard work, this would be the perfect place. We went around 7:30 Friday night, not sure what to expect. It was a hybrid of Spanish (Spain Spanish) and Italian food.

Preview of what's to come..

Preview of what’s to come..

Right off the bat, we were pleased. The flamboyant host asked us whether we wanted to sit outside or not and we couldn’t decide. He then says, “Well most people fight each other to get outside” (I couldn’t place his accent, Chris thinks Barcelona) so we opted for that. They have a beautiful outside arrangement and we were lucky enough to sit next to a nice flower box. Stringed lights hang around us, making it very romantic and relaxing. There were a few other people around us, but nobody was loud or obnoxious. It was a nice summer night, no need for a jacket.

Beautiful night

Beautiful night

Our waiter was excellent. She may have been slightly overworked, but she didn’t miss a thing. To start ourselves off, we got a caraffe of Tinto de Verano (summer red wine with sparkling lemonade). It was definitely worth it as we each got at least 3 glasses out of it. It was delicious, light, and refreshing–very glad we got that. Food-wise, we got Ensalada con Melocoton which was beautifully-made, very light and not overdone with flavor. And of course, we had to get the bread. On Yelp, people rave about their balsamic sauce and boy were they right. The bread came fresh out of the oven, actually too hot to touch at first. Once we could get our hands on it, we couldn’t stop. The sauce was absolutely wonderful, full of complex flavors, a true pleasure to eat. I can’t wait to go back during “happy hour” and just get bread. Our last appetizer was Antipasto Dagabi which sampled meats, cheeses, and olives. It was a good choice: all the cheeses had different flavors, there was some fruit too to pair with cheese, and I actually ate some olives! You can tell in our pictures that the night gets progressively darker…

By this point, I am already near full (what a surprise), but we still have our entrees yet. I ordered the special, which was wild boar meatballs with gnocchi (yep–I finally got to have some meat!) and Chris got Filetes Rusos which was kind of Spanish-styled hamburger with mashed potatoes and asparagus. We both agreed that the entrees were good, but they weren’t of the same caliber of the appetizers. I couldn’t finish mine, so I got had it wrapped ate it on Sunday. For dessert, we got a raspberry creme brulee (Chris pressured me into it, I swear!). Usually I like it plain, but it was very tasty. Chris, who normally doesn’t like creme brulee, shared it with me and enjoyed it as well.

Overall, it was truly a wonderful experience: a beautiful setting, delicious food, and attentive wait staff made the night a success. We will definitely be coming back here at least for the appetizers and the atmosphere. Fit gives Dagabi Cucina a big thumbs up and can’t wait to get some more bread and balsamic–happy hour is every night, right?! This place is definitely a contender for best Spanish food in Boulder. Eat at Dagabi Cucina to stay hungry and fit!

Green Protein Smoothie

This may surprise you, but I’ve never really done “juicing” or used spinach in my smoothies. Sure I’ve had carrot/apple juices, but it’s just not something I’m into (nor am I against it–just don’t have a juicer). However, when I saw this recipe from one of my favorite bloggers, I had to try it immediately! Yes, it has spinach in it, but don’t let that deter you! It also has peanut butter, banana, and greek yogurt in it! Those are the ingredients that pulled me in. I actually wanted to make this a few days ago, but we had everything except bananas (I had just made these muffins). I was heartbroken. So the next day, we went and got bananas so I could make this first thing. I changed this recipe a little: went from smooth to chunky peanut butter, used almond milk instead of regular, and, of course, threw some protein powder in there.

photo 4 (3)

Macros (per serving)

  • Calories: 261
  • Fat: 5.7g
  • Carbs: 28g
  • Protein: 28.6g

Ingredients

  • 1 cup raw spinach
  • 1/3 cup plain nonfat Greek yogurt
  • 1/2 cup Silk Vanilla Unsweeted Almondmilk
  • 1 tsp chunky peanut butter
  • 1 tsp honey
  • 1 scoop unflavored protein powder (but a vanilla flavor would do well too)
  • 5 ice cubes

Directions

  • Throw the ice, milk, yogurt, banana, spinach, peanut butter, and honey into the blender. Press “ice crush” a few times to get that ice down to bits. Then blend.
  • Once it starts to become mixed, throw the protein powder in.
  • Serve!
Yum

Yum

Pretty easy directions and it serves well anytime of the day. I was a little cautious about trying it, with spinach being the main ingredient of the smoothie. However, I threw a straw in and went for it. I was so pleased and surprised–it was delicious! You could taste all the subtle flavors. The spinach didn’t overpower it at all but rather shared the palate well with the peanut butter and banana. I wish I had two servings because it was so tasty, but I was actually quite full and satisfied just after one. And I absolutely love the natural color the spinach brings out–a light fresh green. Use this recipe to stay hungry and fit!

Recipe FAIL and a Pick-Me-Up

We’ve had this cauliflower in the fridge for some time now, and we’ve just been so busy moving, house-sitting, being sick, and getting our stuff together that we haven’t done as much at-home cooking as I would like. Sure we’ve done easy peasy meals here and there like quesadillas, muffins, and ramen, but not new recipes I’ve wanted to try. Well this was about to change (or so I was hoping)! I was so successful with my other no-yeast whole-wheat pizza recipe, I was like SURE I can do this cauliflower pizza recipe from here. WRONG. It called for a food processor, but I don’t have one really. So I just chopped into lots of bits. Anyhow, as you will see below, IT DIDN’T WORK OUT. I made the crust too thin and didn’t balance the cheese ratio me thinks.

YIKES

YIKES-and a blurry pic to boot, nice, Alana

I kind of knew it went wrong after 5 minutes in the oven, but went through some self-denial until after, 25 minutes it was a burnt mess. Determination squashed, I told Chris that my dinner attempt was done and that it was his turn. He debated making a gourmet mac and cheese, but as we are both sick (who gets a cold in summer?!), we didn’t need more congestion, ESPECIALLY since Warrior Dash is this weekend. So eventually, he decided (I wouldn’t give him any input like a brat) on his favorite Chinese place in town, China Gourmet (I can’t believe we haven’t done a post about that place).

We enjoyed a nice sunset and spent some good time together sitting down and eating food we didn’t have to prepare. The motto of this story isn’t to get Chinese food after a recipe fail, but I wouldn’t be mad if that’s what you got out of it. What I want you to get out of it is to not be hard on yourself for everything and accept that you’re not perfect and you can’t be good at every little thing you do. I screwed up a recipe–who cares, we made a solution and are happy for it. So next time you burn that batch of cookies, either cook up something easy that you love, make your partner cook for you, or go out for a cheap meal! I promise you will forgive yourself. Use this advice to stay hungry and fit!
