Parmesan Zucchini Rounds

We are on our last leg here in Colorado as we get ready to move to California. Which means we have bits and scraps of odd food items we are trying to get rid of. One of the surplus foods we have are zucchini! Summer time always yields tons of zucchini, so we always need to find use for them. I wanted a quick side to our dinner before we went and saw Hercules (review coming) and realized we had Parmesan too. Perfect! Parmesan Zucchini Rounds— delicious bites of vegetable and cheese, yum! The recipe is ridiculously easy and tasty.

Parmesan Zucchini Rounds

Ingredients
  1. 1 zucchini
  2. Parmesan
  3. Salt
Instructions
  1. Set oven to 425 degrees F
  2. Peel your zucchini
  3. Cut into quarter inch rounds
  4. Place rounds on parchment paper or a greased baking sheet
  5. Put a sprinkle of salt on each one
  6. Put a small spoonful of grated Parmesan on each one
  7. Bake in oven for 20-30 minutes
  8. Serve immediately

  1. Feel free to put garlic on as well!

They may not look purdy, but they are yummy. I could literally eat a whole zucchini by myself if I cook them this way. It’s my new go-to snack. Cheesy bites while getting your fill of veggies! You can use any size zucchini, and it’s a crowd pleaser (even the kids). Use this recipe to stay hungry and fit!

Best Cafe in Longmont: Cafe Luna

There is a wonderful cafe on a street in Longmont that not many pass through. It looks like a house and when you enter, it feels like you are home as well. This cafe is Cafe Luna. With a sign that says “Friends don’t let friends drink Starbucks,” you know you’re in for some personality here. It’s a wonderful cozy atmosphere with local artwork on the wall and a room chock full of books to read. It’s my favorite place to get breakfast and it always puts me in a good mood.

If you couldn’t tell already, this is a local business. They have tons of different drinks, but I usually always get the Chai. And alongside my Chai, I get “Oatmeal w/ the fixings.” It’s my favoritest favorite thing. One of my favorite things about this is that everyone who works here (I’ve seen four people so far) makes it different. It’s never the same. However, you are always in for a treat. They cook the old-fashioned oats, use steamed milk, cinnamon, sometimes sugar, some kind of nut and fruit. With each bite, your mood rises.

It’s a cafe to relax in, to be content in, to read in, to study in, to meet with friends in, to start your day right in. I love cafes like this–cozy, comfortable, home-y, and unique. They don’t take themselves too seriously, their prices are low, and they make sure to have you feel at home. It’s hard to leave without a smile. There’s also WiFi!

Their baked goods are also excellent. When I come here just to get my oatmeal, I almost always get a muffin too. They prepare and bake these things in between orders from people. Hungry loves their cookies and also enjoys that they have Mexican Coke. Everything has that homemade feeling, it’s almost as if you’re in a Bed and Breakfast or something similar to that nature. I’m thankful someone introduced me to this place. Although we are leaving, I hope this review helps more people enjoy the splendor that is Cafe Luna. As always, stay hungry and fit!

An Easy Way to Stay Current: theSkimm

As you may or may not know, Hungry and I studied the International Studies field at college. We are very concerned, aware, and conscious of what happens in our world. We look beyond America’s borders into every other place in the world. Sure, we have our specialties, but it all matters to us. Why am I talking about this? Because I want to share with you an easy way to “be in the know” with what’s going on in the world every day.

In comes theSkimm. A quirky, smart newsletter (I’m not sure what else to call it) that finds its way in your inbox every weekday morning. This newsletter contains very short briefs of the most immediate issues occurring worldwide. Almost as if you were skimming the newspaper (get it?). It’s usually around two to three main “articles” while the rest are little tidbits of information. It’s fun, it makes you laugh, and it’s easy to understand even if you were not previously aware of the story beforehand.

We are not sponsored by theSkimm at all, but when I find things I really like, I want to share it. Even though I am on BBC and NPR every day, I still like to get my fill of theSkimm in the morning while I’m making my tea. It’s that fast. It’s a combination of the younger generation’s lack of time and their way of packaging things up into succinct, clear ideas that makes this newsletter great.

Motivation Monday: Why Do I?

In the slew of life, it’s easy to lose motivation. Hungry and I know that very well recently, as we’ve been caught in the whirlwind of the move. We’ve been pulled this way and that to try to get everything in order before we leave for California in 11 days. We haven’t been as set on our fitness regimen as we usually are. Some days, you can’t even find us at the gym! That always stresses both of us out as fitness is a huge part of our life. Motivation can dwindle when life gets busy, but we can always find a way to see the light.

Even when life catches up with you, the power is always within you to beat it back down. We have tons of pathways for motivation and sometimes you have to search all of them to really draw that inspiration to keep going and get back on that horse. You’ve seen our previous Motivation Mondays, so I want to bring you in a different direction and ask you to ask yourself a question. 

Why do I?

Why do I what? I want you to ask yourself, why do you exercise? And be honest! Write down all the reasons. Is it to get strong? Is it to get thin? Is it to keep off that heart attack that lies in your genetics? Is it to be the best in your sport? Is it to put off that extra weight? It is to balance your wine indulgence? Is it to stay mobile? Is it to be an example to your kids? Is it the ticket to winning your crush? It could be anything. We all have tons of reasons–some vain and some rooted deep. 

Take out a piece of paper and pen, your laptop, your phone–something that you can write this list down. I want you to read it over and make sure you get it all out. Then print it if necessary and put it up where you will see it every day. It could be the fridge, the mirror, the dresser, and so forth. Put it in a stand-out place. Remember, this is for you to take back your fitness and ride that motivation wave.

Let us know how that works out for you. I know I will be doing this list as well. It’s important to stay connected to the roots of our fitness. Why we started this journey and why we never want it to end. Motivation can be drawn from many places, but a big source is yourself. I hope you enjoy making this list. Boulder’s Best Burger is at 4580

I love burgers. And when I can’t make it to White Manna in Hackensack (NJ) I’m never happy with the burger that I eat. In terms of international burger quality, I somewhat recently had what was most likely my best burger outside of the United States in New Zealand at Burger Fuel but I’ve struggled to find a burger I really enjoy while living in Boulder the last few years.

I’ve eaten in their entirety the best burgers that The Buff, The Med, The Cork, Mountain Sun, Smashburger, Snarfburger, Mustard’s Last Stand, FATE Brewing Company, Five Guys, Turley’s, and many other popular locations in town. I won’t go into detail about those experiences here but I will say that Restaurant 4580 has been awarded “Hungry’s Best Burger & Fries” in Boulder, Colorado. Here’s why.

Value: About $10 for the standard burger with lettuce, tomato, and onions. And fries, of course. I add blue cheese and bacon for an extra $2.50, which is well worth it. So you have $12.50 for a plate that will fill up the vast majority of just about anyone’s stomach. (Trust me, I can eat more than you!)

Taste: They always have a chef’s choice burger that changes every week but you can make it how you want. The flavor profile created by the high quality basic ingredients with the bite of the blue cheese and the fat of the bacon create a confusing yet delightful feeling on your taste buds. 

Cooking it Right: When I ask for Medium-Rare a touch on the rare side, they make it that way. Other locations listed above have made the burgers much further done than I ordered. The onions are also grilled, which is far better than getting a slab of raw red onion on your burger. That is just lazy. 

The Fries: These might easily be the best fries in Boulder. They are crispy but never overcooked. They are not dry but also are not soaked in grease. The portion size is great and the kicker is the course salt they use to dress the fries. They’re amazing and never make it home.

There you have it. Those are my reasons that after tasting many of Boulder’s burgers I am telling you stop by 4580 for one. It is reasonably priced for the portion (steak is mixed into the burger patty), you can customize the burger so the taste is spot on, they cook it how you want it done, and the fries are simply the best. Also, 4580 just had a very nice remodel done so it’s worth checking it you. (I also highly recommend the spinach-artichoke dip. Fit claims it is the best she has ever had!

Obviously, I have not had EVERY burger in Boulder and I have been told Reuben’s is the best, but people also told me that I would like Smashburger so trust no one and find out for yourself. But trust me if you want to stay hungry and fit

3 Foods to Supplement Your Supplements

If you’re a weird one like me, I don’t take many supplements. Sure, I take multivitamins and sometimes a Cytosport electrolyte drinks and also some protein powder. However, it’s not an everyday thing. Hungry, on the other hand, lives in the world of supplements. Everyone has their own way of doing things. This specifically addresses pre-workouts. I have a sensitive body to things like caffeine and other stimulants. I have not found a pre-workout that doesn’t send my body through the ringer. This is why I present to you a list of foods that often serve me well as pre-workouts. 

1. Kombucha with chia seeds. I know, I know–“so Boulder.” But really, this stuff gets my energy up and my muscles ready to pump! My favorite is the Raspberry one, enough sour to sweet ratio. There are tons of Omega-3s, Probiotics, and antioxidants. You also have a few grams of carbohydrates, to give you some energy. Those chia seeds just get me going without making me full.

2. Grapefruit. Pure and simple–a wonderful easy snack to get ready for your workout. Lately, I like to put cinnamon on top as well. With an entire grapefruit boasting about 100 calories with 26g of carbohydrates, this tasty yet tart fruit will be sure to get your energy going. It’s the perfect amount of food to keep you from being hungry during your workout, but won’t weigh you down.

3. Peanut butter and jelly on matzo. Don’t look at me like that! Seriously, this is an amazing combination. We always have matzo in the house. By using matzo instead of traditional bread for this “sandwich,” you are taking out some of the filler that could make you feel heavy and full during your workout. This cracker-like substance is the perfect medium for peanut butter and jelly to do their thing. Now, this is a light layer of both peanut butter and jelly (or jam, as we use). I promise you this one-of-a-kind snack will not dissapoint. The matzo and jelly give you some carbs for energy while the peanut butter will give more sustained energy for long-term and keep you from feeling hungry.

World Cup Wrap Up

One year ago, someone asked me who would hoist the World Cup in the Maracana. I said that Germany and Brazil would face off in the final and the Germans would raise the Cup. It was a straightforward question and I provided a clear answer but that was long before the groups were made and so much more has happened since that time. (I, personally, wish I wrong. France is my team and I wanted Ivory Coast to make it very far because Drogba is my favorite player.)

That same person of course asked a few other questions including who else would make the semi-finals and what impact it being in Brazil would have for the host nation. I answered Holland and Spain, and that if the tournament was not in Brazil, the hosts would not make it as far. Simply put. But again, a lot has transpired and it’s worth discussing some of the key points. Here are a few to wrap up the 2014 Brazil World Cup.

1. The Germans were the best balance of talent and teamwork throughout the whole tournament. That is why they won. Add a few fortunate events in their favor in the final and everything works out in their favor. You could easily argue that they earned those favorable happenings including some awful misses by the Argentine strikers. 

2. Despite a poor performance, or rather effort, in the final, Messi was the best single player in the tournament. I’m not saying he deserved the Golden Ball, he wasn’t resilient enough in the final to cement the award, but he made the difference in the group stage and the first knockout stage to send Argentina through. I was shocked by how far Argentina made it, although their path was not the most challenging. Robben and James obviously were the clear contenders for that award. Robben, however, reflected a negative behavior of football by diving often, and James already received the Golden Boot, so the choice is not unreasonable.

3. Injuries had a major impact on results. Some teams were far less fortunate than others. I think France would have made the quarters and even semi finals with Ribery. I think the result of the Germany-Brazil match would have been different with Neymar (and Thiago Silva). With a healthy Aguero and Di Maria in the final, Argentina may very well be holding the World Cup. But the best part of the World Cup is that anything can happen and while we feel bad for those players, such is the nature of the game. I do wish Neymar a full recovery.

4. Some outstanding young players helped themselves get noticed on this grand stage. Alexis Sanchez was immediately signed to the Gunners after his explosive performances. Ochoa and Navas showed themselves to be competitive with some of the biggest names in keeping in the world. James, again, raised his stock immeasurably by carrying an average Colombian team into the knockout stages among a very challenging and potentially second group of death.

5. Finally, the former champions who I still see as the best team in the world failed miserably to defend their crown. While I did think Spain would make the semis, I was not surprised to see them exit early. Italy suffered a similar fate after winning in 2006 with an awful performance in South Africa. Every player on Spain has accomplished many great feats in the world of football and it really just seemed as if this World Cup did not mean much to them. We will see how they rebound.

In exciting news, my club team (Arsenal) has revealed some nice new Puma kits while Manchester United has revealed some hideous Nike/Chevrolet kits. I am anxious to see what Adidas has in store for Man U. Congratulations to Pogba, James, Neuer, Messi, and Germany! I hope everyone continues to watch football even though the World Cup is over. Don’t forget… the women’s World Cup will be in Canada next June so if you are planning on attending let us know because we will be there!
