Whole-Wheat Churro Balls Recipe

Boy am I ecstatic to have found this recipe. And boy am I even happier to have not looked ahead and not have any regular flour on hand. What do I do when I don’t prepare properly (aka too busy drooling over the thought of churros)? I improvise! Would whole-wheat flour work with this recipe? Not so sure! Try it anyways? Sure! And guess what–I lucked out! Even though it wasn’t exactly a smooth recipe process for me, they turned out delicious and fuller with fiber without the processed flour. Yay for steps in a healthier direction! Anyone who knows me knows that I have a bad addiction to churros…and anything cinnamon. When I stumbled upon that recipe, I couldn’t contain my excitement. I finally finished my contest, so I jumped on the opportunity to do this.

  • Prep Time: 5-7 minutes
  • Cooking Time: 4-5 minutes

Macronutrients (per ball)

  • Makes: 10-15 balls (but it depends on the size you make them, mine came to 11)
  • Calories: 58
  • Fat: 1g
  • Carbs: 11g
  • Fiber: 2g
  • Protein: 1.5g

Ingredients

  • 1 cup water
  • 1 tablespoon white sugar
  • 1 cup whole-wheat flour
  • 1 tablespoon oil
  • oil for frying 
  • 1/4 cup white sugar
  • 1 teaspoon cinnamon

Directions

  • Combine the water, tbsp sugar, and tbsp oil in a saucepan over medium heat. Bring to a boil
  • Stir in the flour until it forms into ball-like structures

  • Heat up oil in a deep pot to fry the churro balls in. Should be 190 degrees F and that’s when you need a thermometer (which I don’t have and consequently slightly burned them…only some!)
  • While the oil is heating up, mix together the 1/4 cup sugar and cinnamon in a bowl

  • With your hands pick up the dough in the cooled saucepan and roll them into donut hole-like balls. Make them whatever size you want. Pop them into the hot oil and let cook for 4-5 minutes. I didn’t put enough oil in so I had to roll them around. Make sure the oil isn’t too hot so you don’t smoke the apartment out (oops)!
  • Take them out and drain or pat with paper towel. When cool to touch, roll them in the cinnamon-sugar mix. Get them nice and covered!

  • Serve as a pile or just eat them all yourself! I couldn’t help myself and had four as soon as they were done. Oops.

This is such a simple recipe–I mean look at the ingredients! If you want to follow the traditional recipe, you can use regular white flour, but why not go a little healthier? Add some more fiber and whole-grain into your diet through deliciousness! They are a perfect treat for after dinner or to serve to friends. This is a recipe I will continue to use and perfect upon. I think next time I might add some cinnamon-sugar to the filling…Use this recipe to stay hungry and fit!

Healthy Greek Yogurt Mini-Cheesecake Recipe

I’ve been wanting to make these for a loooong time. First, the problem was I couldn’t find one ingredient anywhere. Then, it was that I was prepping for the contest, so I stayed away from dairy. Finally FINALLY, both those problems are over. I found the ingredient (Green Mountain Farms Greek Cream Cheese) at Wal-Mart (unfortunately) and this past Monday, my contest was complete!

I can hear you saying, HEALTHY cheesecake?! Give me a break! Sure, it may not be better for you than a protein shake, but hear me out. This magical ingredient cuts half the normal fat of a cheesecake and deals twice the protein. Can you say SERVE ME ANOTHER?! I thought so. I got this recipe from here and cut it in half. It was very easy and so so good. Creamy, delicious, and light—and it doesn’t leave you feeling like you have a bowling ball in the tummy, which I appreciate. This is a recipe I will often go back to as Chris and I love cheesecake. You could do it with or without the lemon twist (we happen to like it).

  • Prep Time: 10-15 minutes
  • Cooking Time: 25-30 minutes

  • Serves: 6 (you can always double it for a bigger party)
  • Calories: 182

Ingredients

  • 3 cinnamon graham crackers
  • 1 tbsp butter
  • ¼ cup sugar
  • zest of ½ lemon
  • 1 egg
  • 1 8-ounce package of Green Mountain Farms Greek Cream Cheese & Greek Yogurt
  • 1/8 cup heavy whipping cream
  • ½ tsp vanilla extract

Directions

  • Pre-heat oven to 350 degrees F
  • Line your muffin tin with cupcake liners (I used ones that were waaaaaaay too big)
  • Ground your graham crackers finely—I used the bottom of a glass and a bowl…and eventually my fingers

  • Mix in the butter with the graham cracker crumble
  • Put the crumble at the bottom of each cupcake liner, try to make it even

  • Bake for about 5 minutes and let cool
  • Grate some lemon zest
  •  The recipe asks for a stand mixer, but we don’t have one of those. So I used a whisk! Mix all the rest of the ingredients together in a medium sized bowl. Make it smooth.

  • Pour into muffin liners about 2/3rds full. Mine definitely were not all even. Do what you can.

  • Put in the oven for about 20-25 minutes. Mine were good at 23. A little cracked, but after refrigeration, they smoothed out.

  • Make sure to let them cool. Then pop them into the refrigerator for about 3 hours before you serve.

That’s it! You can garnish it if you’re feeling fancy, but I like ’em plain. These are just so good and mini…it’s perfect. And the macros don’t leave you feeling bad. It’s easy to make, easy to eat–what’s better than that? Use this delicious recipe to stay hungry and fit!

Birdsall’s: The Best Ice Cream in the West

I find it  pretty funny that I’m writing this post after discussing clean eating, but who cares when you’re talking about BIRDSALL’S! We’re talking homemade, home-churned, quality ice cream from the mid-west. Yes, I’m making a big statement by saying an ice cream joint in Mason City, Iowa has the best ice cream in the West, but there it is. Many of you will never try this place because who plans a trip to Mason City? Well, we do as that’s where my dad is from and where my grandparents and other relatives live. It’s our family reunion spot and we hit Birdsall’s at least twice every day we’re there (not kidding).

As you can see in the sign, Birdsall’s has been around for a long time. My brother and I (who you will see below) grew up in Mason City, Iowa every year as our parents would ship us off to our grandparents for the summer. Birdsall’s has always and will always be a highlight of our days there. What do you do in Iowa? People think it boring, but I know it’s tons of fun: movies, games, swimming, ping pong (lots of ping pong), delicious homemade food, and...ICE CREAM! Once Chris became a part of this reunion, he made Birdsall’s a priority and nobody in the family argued against him. Birdsall’s gets tons of business when we come into town. Chris even got a $13 turtle (basically a hot fudge sundae)–a quart-sized ice cream. It was as big as my brother’s head (and he has a big head!).

Now you may think it’s expensive based on the $13 I say, but remember that’s an entire quart. Their ice cream is wonderfully-priced (perks of Iowa) and it does not match the quality of the ice cream (they should really charge more). If we were there a month or so later, we would be served with delicious, home-made, fresh peach ice cream. With real peaches in it fresh from that season. You know it’s quality when they have seasonal flavors.

My last name is Powell and we all say “it’s the Powell gene” when we over-eat ice cream…every night. Sorry, can’t help it, it’s in my genetics. And although I did frequent Birdsall’s while during contest, I pretty much stuck to my macros, but still didn’t do great things for me unless you count…HAPPINESS. Some of our favorites from Birdsall’s include the Frosty Malt–basically a Wendy’s Frosty but real. Like with real ice cream and real malt. It’s so refreshing and usually my go-to.

Other great flavors include peach (duh), chippermint, pecan, and raspberry chocolate truffle. I’m drooling as I write this. I’d have to say the all-time favorite with the most overall votes from the group would have to be the turtle: vanilla ice cream with hot fudge, caramel, and nuts. Now this may sound like a typical ice cream sundae–but it’s not. We have never been able to replicate this or find this anywhere else. People may offer it or they might even custom-order for us, but nowhere can you find this amazing quality-filled turtle where the hot fudge doesn’t harden. Every other place, even beloved Glacier, hardens. It’s amazing. And the turtle was what Chris ate quart-sized.

If you’re travelling cross-country or even across the mid-west, do yourself a favor and stop at Birdsall’s in Mason City, Iowa. It’s hard to find ice cream that high-quality and the turtles and peach ice cream cannot be beat. Sorry if you’re on a strict diet right now (like I am), but hey if it hits your macros, go grab some ice cream! I cannot recommend this place enough and the joy it brings. There’s something for everyone. Birdsall’s is perfect for staying hungry and fit!

The Perfect July 4th Treat: Stuffed Strawberries

Now that I think about it, it doesn’t need to be July 4th…it can be any nation’s pride day who has red white and blue. And you aren’t limited just to July 4th either because it’s a healthy and delicious treat! I may have served these on July 5th, but that’s only because we already had rhubarb pies made by my grandma. This special dish involves fruit, dairy, and happiness and doesn’t take longer than 15-20 minutes to make! I got it from here and added a bit of lemon into it and took out some sugar.

Prep Time: 15-20 minutes

Cooking Time: …non-existent

Ingredients

  • a tin of strawberries (I just usually get the regular pound at the grocery)
  • a tin of blueberries (same thing)
  • 5 oz marscapone
  • juice of a lemon
  • lemon zest
  • 2 tbsp powdered sugar
  • 1 tsp vanilla

Directions

  • Wash the fruit and pat dry all of it

  • Take the strawberries and cut the green ends off and also a little portion of the tip so they can stand upright on a platter
  • Take a melon baller and ball out of the bottom, creating a crevasse.

  • Once your strawberries are all “pitted” and plated, let’s turn to the filling. Put 5 ounces of marscapone cheese and put it in a small-medium bowl
  • I would next do the lemon juice. Cut the lemon in half and squeeeeeze all that juice out.
  • Next, grind the lemon on a grater and get a good amount of zest (people say 1 tsp, but I eyeball it)
  • Then, throw the powdered sugar and vanilla in and stir! Mix it all up really well

  • Now comes the most difficult part: take the marscapone mixture and put it into a re-sealable bag and snip a corner off. Use this contraption to fill the pits in the strawberries up with the mixture

  • Once all the strawberries are filled to perfection, place the blueberries on top of the cream in the strawberries. And that’s it!

This is an easy, healthy treat you can substitute for pie or something else you’d like to stay away from on those holiday food feasts. Fresh fruit and sweet cheese. How could it go wrong? It’s easy to do, pretty to the eye, and delicious enough to impress. Make this recipe if you’re looking to stay hungry and fit!

A Sweet Tooth’s Delight: Peddler’s Creamery (Los Angeles, CA)

While we were back in my home town (Santa Monica, California), we traveled to where my brother lives–in Downtown Los Angeles. Not exactly my most favorite part of LA, but what are you going to do! He shares a really nice apartment with his awesome girlfriend, Sophie. And there’s two Famima!!s right underneath them–you really can’t do better than that. Anyways, onto the good stuff-THE FOOD! Sophie works at a fantastic local ice cream shop called Peddler’s Creameryand that, my friends, is where the magic happens.

She works there as a “Maker,” meaning she literally develops and creates ice cream flavors. ARE YOU KIDDING ME?! Best job ever, am I right? And Peddler’s is special because not only is it locally-owned, but the ice cream is made by them using a bike to churn it. Get a workout and then eat ice cream–sounds like a good day to me. I love how unique this place is and that they literally churn their ice cream by using a bike. And not only do they use organic ingredients, but they use fair trade ingredients too! A huge plus for me.

It’s a small little shop with some outdoor seating–very cute. You can see an old-fashioned bike in the front and the one they actually use in the back. We met the owner, who gave each of us a handshake and a genuine greeting–it’s not often you get that from the owner of a food joint, very nice guy. When we visited, the scooper was patient and very friendly as we all (my family and Chris) took awhile to decide between all the unique flavors.

Now the flavorsThese flavors change daily and are subject to season (another awesome) and are probably the most unique ice cream flavors I’ve seen to date. Some special ones are Mexican Chocolate, Chile Mango, Honey Lavender, and Kumquat. I got the cinnamon (I have a crazy obsession with cinnamon-type desserts, see: CHURROS) and boy did I make the right choice! Each bite was infused with the creamy “spicy” flavor of cinnamon. It was a melt-in-your-mouth kind of deal and also a where-did-my-ice-cream-go moment too. I was reluctant to share with my family, but I did. They got some yummy ones too like the Honey Lavender and a Mocha one.

If I worked there, I would be as big as a balloon and probably get fired for eating too much on the job. If you are anywhere in the Los Angeles area, GO HERE. I have linked the website with the address and everything several times throughout this post, but here it is again. This adorable, eco-friendly local shop serves top-notch quality ice cream with interesting flavors and great service to boot. You’re missing out if you don’t find this gem! I will always be hungry (and fit!) for Peddler’s Creamery!

Fit’s Favorite Spot: Yogurtland (Los Angeles, CA)

For the past few years or so, frozen yogurt has started to trend and is now a craze. I am certainly not separate from this craze–I love it too! It’s refreshing, delicious, and cheap! If you go to the right place, of course… And that leads me to YogurtlandIt is alwaysmust-stop when I visit home in California (as there are none nearby in Boulder, CO). They call themselves “the land of endless yogurt possibilities,” and it is so true.

You can find yogurt places everywhere, we even have a favorite here in Boulder. But for me, Yogurtland tops them all. Why? Many reasons. First, let’s start with the incredible flavor selection: there’s always something for everyone, whether you feel like chocolate, tart, fruit, or any of the crazy flavors they come up with. When we were there, they were doing some “travel the world” mission to get different flavors from all over the world. They always have the best. And ENDLESS toppings too.

Second, they put real ingredients in their yogurt. If you get pistachio yogurt, there’s pistachio in there. They do it with real milk and use seasonal fruit. It always leaves you feeling refreshed and happy, unlike other places that will make you feel bloated and a little off. Third, they make sure to stock your yogurt up with all the probiotics you need, leaving you with a healthy gut and a happy belly with their deliciousness. And another big one, the price. You go to a lot of these yogurt places (one near our college comes to mind) and they are crazy expensive. Sometimes it’s just not worth it. But not at Yogurtland! 35 cents per ounce. Guaranteed for a delicious, healthy (depending on toppings), cheap treat.

This is a raving review of this place. I have loved this franchise since I first had it and no other yogurt place could ever stand beside it. I used to be a Pinkberry person, but never again. My favorite combo is tart with some other fruit flavors (acai if they have it) and I put toppings like mochi, lots of fruit, and sometimes yogurt chips (redundant, I know) on as well. I’ve turned on lots of family and friends to this place and it’s always worth the trip to Little Little Tokyo (not in Downtown LA, but in Westwood). If you have one in your state, make the trip there and go to froyo heaven.

The Best of Best of Boulder County 2012

This is a review of a review. Every year the readers of Boulder Weekly vote on the Best of Boulder County and while it is all opinion, local businesses love to hang their awards throughout their shops and eateries. Although we haven’t even lived here for a year, we have tried to eat and venture to as many places that our busy lives allow. We are also very opinionated, especially when it comes to food. People can claim they love food as much as me but I would challenge you to put your money where your mouth is if you doubt our hunger. So I’m essentially going to flip from page to page and rant when I feel necessary so hang in there.

The cover features a picture of Naoto Kanda, the owner of Sushi Zanmai. His restaurant won Best Japanese Restaurant. Despite recommendations from my boss, Ryan, and our family/friend, Fred, we have yet to try this location because every time we walk by it is closed. Despite mediocre Yelp reviews, we’re going ASAP so look for an upcoming review.

Before I move on, since I have already gone through the whole magazine, I would like to say that this isn’t really a fair judge of the Best of Boulder County. I would venture to estimate that 90% of the votes received are from people living in Boulder like ourselves. Other towns in Boulder County, with lower populations and population density, most likely are not fairly represented but it is a poll for readers and everyone acknowledges that truth.

Best American Bistro who cares. I don’t eat bistro sized or priced portions typically so I can’t say much about the top five here. Best Appetizers went to The Med and the one time we went we did enjoy the multitude of appetizers that our large group got so fair enough. Who cares about best brunch? Not me. I want more meals so I break them down… not combine them.

Here is the first crime. Best Asian Fusion Restaurant. Chez Thuy won with Japango coming in fourth place. Chez Thuy was one of our worst dining experiences yet. We ordered a lot of variety and nearly everything we had was bad. Not decent, but bad. The pad thai was awful. Second worst I’ve ever had to Pong Sri in New York City. Japango was also a bad meal and the menu did not represent many Asian cultures. You want good Asian Fusion… go to Kho’s Asian Bistro in Longmont. It’s New York or L.A. quality.

I’d have to give Best Bakery to Spruce Confections. Their pies and croissants made our family from across the country and world very happy on Thanksgiving. Breadworks serves “fresh” bread at the Farmer’s Market and by fresh I mean stale. Dot’s Diner rightfully wins best breakfast for the bucks. Don’t sleep on The Buff or Turley’s for best breakfast even though they place third and not on the top five. And please try the Panaderia on 28th Street. It has a museum’s worth of delicious Mexican and Latin American baked choices. That should definitely be on the top five for best bakery now that we think about it.

Larkburger winning best burger is a sham. It was the worst burger I’ve had in town yet. Expensive, slow, small, and worthless. Mountain Sun takes the cake for me, and Mustard’s Last Stand is the best burger for the buck. Moe’s bagels and service has been awful every time that I have gone and we have Einstein’s in Pennsylvania so it wins by default for having locations near New Jersey and New York.

Las Palmeras in Longmont has the best burritos along with some Taqueria on Lashley Street. Seriously, if Boulder locations win best burrito with the population of Mexican Americans that exist in Longmont, it’s obvious where people have eaten. Not in the right place. China Gourmet and Tsing Tao are the best Chinese restaurants. China Gourmet is one of the best Chinese food places I have ever eaten in my life. If you want a good restaurant dessert, you need to go back to Kho’s Asian Bistro or Pasta Vino in Boulder. They have a tower of puff pastry and fresh fruit greatness that tops anything I had at The Med.

I have no quarrels with Best Fine Dining because we’ve only been to John’s Restaurant and The Cork. Ripple and Glacier win as they should for frozen yogurt and ice cream. Tibet Kitchen should win best Indian/Nepali Restaurant or whatever category it fits best into. We haven’t been happy with any Italian yet so that’s that.

Snarf’s sandwiches are the best. Sun Deli has some good sandwiches as well, definitely better than Deli Zone. Best overall restaurants are Kho’s Asian Bistro and Korea House. Tibet Kitchen and Mediterranean Market are best non restaurant style eateries. Abo’s is the best slice and pizzeria… the makers of this poll don’t know what a pizzeria is. The best gyro is Med Market and not Falafel King. Kho’s and Korea house have the highest quality fish for sushi we’ve had so far. Much higher than Tora and Japango. Tibet Kitchen is the most vegetarian friendly so says Alana the veggie. It also gets the best chai drink. You can tell where we like to eat right? Well that’s enough of my ranting. I’ll stop there before we get into gyms and grocery stores and useless things. We’ll try more restaurants and have a better input for next year. Stay hungry and fit!

Ridiculously Easy and Healthy Oat Chocolate Chip Raisin Drops

This one has no sugar or flour…OR EGGS. Wait, what? How is this possible? You got me, but it worked and here they are…delicious, warm, and gooey. I got it from this awesome blog, and added a little bit to it. I’m amazed at A) How healthy these are (just choc chips + raisins for sweetness), B) How easy it is (took me 5 minutes to assemble), and C) How good they are! You can play around with the recipe, add or subtract, have fun with it! And you don’t have to feel guilty eating them. A healthy, nutritious (delicious) snack awaiting your baking:

  • 2 large bananas
  • 1 tsp cinnamon
  • 1 cup oats
  • handful of raisins
  • small handful chocolate chips [optional]

Directions

  • Pre-heat oven to 350 degrees F
  • Mash up the bananas til they’re smooth and gooey

  • Pour in the cinnamon and then fold in raisins and chocolate chips

Van Dyk’s: Best Ice Cream in the East

This is another stop during our New Jersey Easter vacation. Make sure you check out the last one, which will make your mouth water for baked goods. Unfortunately for you, you’re due for another drool-session. This time, make it ice cream. And yes “Team Gluttony” (see picture below) went to Van Dyk’s right after Abma’s.

What is Van Dyk’s? Probably the homemade ice cream store with the best black & white (aka chocolate and vanilla) milkshake I’ve ever had. We always go here on our stops in New Jersey, and during this trip we went too many times. Their ice cream is made right there in the little store and you can tell. Every bite is delicious and never tastes like artificial crap not worth paying for. For the first time, I got something other than the black and white shake (well…ONE of the times we went during a 2-day period). And I can personally say that their ice cream is just as tasty and satisfying as their shakes.

I am now. This ice cream trip was even better because we got to enjoy it with some newcomers and old timers, both of whom we hadn’t seen in a while. Friends and ice cream–hard combo to beat. [Note to family: my Powell ice cream genes are flourishing right now] Writing about this place makes me miss it…can’t wait until our next trip to Van Dyk’s for some delicious homemade ice cream.

The Easiest Healthiest Dessert Recipe Ever: Sweet Baked Pears

I really need to cut down on these title lengths. Anyways, to the recipe. I discovered this recipe through a program I work with at the YMCA, called MEND. It’s a free program to fight childhood obesity and change the lifestyle to a healthy one at home. It’s been very successful! During each session, the participants get a MEND “cookbook”–a compilation of MEND-friendly (aka HEALTHY) recipes. This is from there. This is a guilt-free recipe. It’s basically fruit, cheese, and cinnamon. ENJOY!

  • Prep Time: 5 minutes
  • Cooking Time: 20 minutes

Ingredients [serves 6-8 people]

  • 6 pears (if you’re less-hungry people, you can use less)
  • 1 1/3 cup ricotta
  • 1 1/2 tbsp cinnamon
  • 2 tbsp agave nectar (or honey)
  • 1 1/2 tbsp vanilla extract

Directions

  • Pre-heat oven to 325 degrees
  • Wash the pears and cut them into halves

  • Scoop out the seeds and most of the middle

  • Put the pears on a baking sheet (no oil required) and put in the oven for 20 minutes
  • Let’s now turn our focus to the mixture. Put all the other ingredients (ricotta, vanilla extract, cinnamon, and agave/honey) into a small-medium bowl and mix! Feel free to taste

  • Put the mixture into the fridge to chill until you serve.
  • Take out the pears from the oven after 20 minutes
  • When ready to serve, put dollops of mixture in the hollowed part of the pears!

And that’s IT! Seriously amazing, delicious, and you don’t feel bad eating it because there isn’t any crap in it. This is a recipe I will be frequenting. I whipped it up very quickly after a gym session before we went to a friend’s house for dinner–it’s amazingly simple for how delicious it is. Enjoy!
