Healthy Frozen Treats

If every day was like yesterday, then I’m going to need constant refreshing things to put down my gullet. Unfortunately, that may lead to unhealthier things like overdoses of ice cream and other sweet treats that don’t exactly lead to the bathing suit body we want to present in the upcoming season.

Well, ladies and gents, we have come up with a solution: SILK. No, not the nice pajamas. Silk Milk, the kind that makes you feel great and keeps you kickin‘. We have come up with a few ridiculously easy and healthy frozen treat recipes. We love that Silk appreciates keeping the calorie count low while giving us tons of flavor and goodness. No GMOs and tons of calcium. That’s what Hungry and I need. Silk keeps us healthy and strong while appeasing our taste buds.

These sweet treats will keep your frozen sweet tooth satisfied without added sugars and heavy fat. We used various kinds of Silk milk (from plain Almondmilk to Soymilk) and mixed it up with frozen and fresh fruit. These sweet treats are on a stick, so all you need are freeze pop molds!

Three delicious, healthy freeze pop recipes that will take under 10 minutes

Tropical Freeze
  1. 1/4 cup Silk Unsweetened Almondmilk
  2. 1/3 cup fresh or frozen blend of tropical fruits (pineapple, mango, etc.)
Dreamsicle
  1. 1/4 cup Silk Original Soymilk
  2. 1/4 cup orange juice of your choice
Chocolate Strawberry Surprise
  1. 1/4 cup Silk Dark Chocolate Almondmilk
  2. 1 strawberry
Tropical Freeze
  1. Put the Silk Unsweetened Almondmilk with the tropical fruit into a blender
  2. Blend until mostly smooth
  3. Pour into mold
  4. Freeze for 4-6 hours (all freeze pop molds are different though)
Dreamsicle
  1. Pour Silk Original Soymilk into molds along with the orange juice
  2. Freeze for 4-6 hours
Chocolate Strawberry Surprise
  1. Pour Silk Dark Chocolate Almondmilk into the freeze pop mold (only 2/3 of the way to the top)
  2. Chop up the strawberry and put it in (make sure you don't let it overflow!)
Notes
  1. Every freeze pop mold is different so your freeze pops may take shorter or longer to freeze
  2. Going along with that, you may need to alter the amount of ingredients as it could be too much or too little

If It Fits Your Macros (IIFYM)

For the past few weeks or so, I’ve been trying this fitness philosophy called “If It Fits Your Macros” (IIFYM). It’s a slightly controversial idea. People in the fitness industry love to argue and contest each other’s philosophies. I’m fairly open-minded and like to try new things. I did the whole strict clean-eating thing, did protein-shake only, fruit-only cleanses, and so forth. Strict bodybuilder clean-eaters don’t care for IIFYM. However, plenty of people adhere to IIFYM.

So, what is IIFYM? In this philosophy, you have a set number of calories you can intake based on if you want to cut (lose fat), maintain, or bulk (gain mass). From those total calories, your macros are split up. Macros (aka macronutrients) are your proteins, fats, and carbohydrates. You get a certain number of each (this site has a great calculator for it). For example, I have around 1930 calories per day, my designated protein intake is around 130g, fat is like 55g, and carbs hover around 230g.

In many fitness regimens, you are supposed to eat clean (no crap). However, in IIFYM, you can eat dirty IF it fits your macros. So if I eat cleanly and focus on high protein and medium fat/carbs, I can have a big ol’ bowl of ice cream later. Your diet revolves around “hitting your macros” in any way YOU choose. For some people, it’s great because it allows them to be flexible. For others, they can’t handle all the temptation. Some people don’t even believe it works because there’s “dirty” eating involved.

For me, it has gone fairly well. I don’t always hit my macros, sometimes because I don’t get all my suggested calories and sometimes because I go over a few. So far, I’m kind of liking it. It allows me treats but also sets a limit. Gives me some moderation. I’m not sure how long I will keep doing this, but I will stick with it for a bit longer. Tracking your nutrients is vital, I use MyFitnessPal (add me! “nanathetiger). We may go back to strict clean-eating soon. Who knows!

It’s good to know all the fitness philosophies out there. Some (MANY) are fads, but it’s worth investigating to find out what works for YOU. There is no one-fits-all fitness regimen. Something could work perfectly for you, but completely fail for me. It’s important to try stuff out and see what your body and mind likes best. As always…stay hungry and fit!

Chocolate Spinach Brownies

The first thing my dad said when I told him I made spinach brownies was “Eeew!” almost exactly. And I don’t blame him. Spinach…and chocolate…? It sounds like a weird combo, but it works. I wanted to make some sort of healthy treat for our management meeting today, and I remembered a recipe that I had bookmarked from Brooklyn Farm Girl. Perfect! Plenty of chocolate without the guilt. Now, that is something I can get behind. Especially after the cleanse, I’m trying to be good and stick to my macros (post on that coming later this week).

    Ingredients
    1. 1/2 cup regular flour
    2. 1/2 cup cocoa powder
    3. 1 cup pureed spinach
    4. 1/4 cup melted butter
    5. 3/8 cup (little less than half) regular sugar
    6. 3/8 cup brown sugar
    7. 2 tsp vanilla
    8. 1/2 cup melted chocolate chips
    9. 1/3 cup chocolate chips
    10. 1/2 tsp baking powder
    Instructions
    1. Pre-heat oven to 350 degrees F and grease up a 8x8 (or a cake tin) pan
    2. Puree the spinach in a blender or food processor, using a few tablespoons of water
    3. Mix the melted butter with the regular sugar and brown sugar
    4. Melt the chocolate chips and mix into the butter/sugar mixture
    5. Mix in the spinach puree and the vanilla extract into the buttery sugary mix
    6. In a smaller bowl, mix together the flour, baking powder, or cocoa powder
    7. Slowly, add the dry mix to the wet until it's all in
    8. Fold in the non-melted chocolate chips into the mixture
    9. Put in the oven for 30-35 minutes and let cool

 Mine didn’t turn out as fluffy as I had intended because first off, I didn’t have as much spinach as I needed and second, I accidentally omitted the baking powder. OOPS! Hey no worries, they still taste divine. They’re my little short adorable brownies and I love them. Play around with the recipe and have fun! Bake spinach brownies to stay hungry and fit!

Boulder’s Hidden Gem: Tibet Kitchen

I’m appalled we haven’t written a post about this wonderful wonderful food place in Boulder. Anyone who has visited so far should know about this place: Tibet KitchenThis place was our spot when we first got to Boulder. It had free wifi and $5 lunch specials. It really can’t be beat. It is absolutely one of my top five spots here in Boulder and it doesn’t get nearly enough attention. Cheap, quality big portions. Is there really much else you would ever need?

Tibet Kitchen is a perfect place for a wholesome, healing meal. Whenever I meet Chris for lunch in Boulder, we usually go here. It makes us feel good and keeps us happy. It’s healthy–full of vegetables and well-cooked and seasoned meat. It leaves you feeling very satisfied without a hole in your wallet. Lunch specials run as low as $4.95–no joke! It is incredibly affordable. The most expensive item on the menu is probably $8.75. Yeah it’s that cheap.

The staff is all of the same Tibetan family and they are so accommodating–you will always be offered a cup of their free chai. And that chai is the only chai Hungry will drink. It’s pretty darn good. And boy are they generous with portions. I always have to take something home and it’s a great place for Chris. He can easily get filled up for under ten bucks. I’m telling you, this place is a gem!

I’m sure not many people have had Tibetan food, after all, it’s a pretty small country with not a lot of recognition–especially food-wise. It is similar to Nepali food if you’ve had that. If you haven’t, I would say it’s a cross between Indian food and Chinese food with its own distinct flavor. It’s all made with wholesome ingredients, there’s basically no way to be unhealthy here. The flavors are warm and savory and some dishes have some spice. One of my favorite parts of the Tibetan cuisine is the ting-mo. It’s a Tibetan bread roll, basically dough folded time and time again to make a fist-sized ball of delicious steamed dough. I will eat tons and tons of them. I have a problem. Another star of Tibetan cuisine are the momos. These are dumplings filled with vegetables or meat. Tibet Kitchen makes them from scratch to order every time with fresh ingredients. They are so delicious and so filling. Otherwise, there are plenty of curries and such too.

If you’re in Boulder, please do yourself a favor and go to Tibet Kitchen. It’s affordable, filling, delicious, and healing. The people are wonderful and the atmosphere warm. I always leave happy. The only negative is that the parking lot is tiny, but can’t blame them too much for that. Eat at Tibet Kitchen to stay hungry and fit!

Top 5 Healthy Restaurants in Vegas

We all know how difficult it can be to stay healthy when you’re on holiday, surrounded by exotic cuisine and relying on fast food to keep you going. Just because Las Vegas is synonymous with long buffet lines of overweight Americans and hideous burger joints doesn’t mean you can’t find a sumptuous and healthy spread.

Wolfgang Puck’s “Seasonal American” restaurant was at the forefront of cuisine in Las Vegas, and has been a success since its opening in 1992. The Californian cuisine style menu boasts organic produce with daily changes to the offerings, depending on current organic produce. In terms of health food, the Spago has a vegetarian tasting menu and many seafood options for a healthier alternative to a high-class meal, easily located outside of the Forum Shops at Caesars Palace.

Canyon Ranch Cafe – 3355 S Las Vegas Blvd, Las Vegas, NV 89109

Between 7am and 6pm daily, the cafe in the Canyon Ranch Spa serves a host of healthy foods at comparatively moderate prices, for the Strip. They have smoothies, healthy teas, organic produce and healthy alternatives to main meals like turkey meatloaf, although they do have some awfully tempting-looking Mexican food, wraps and burgers. It’s an excellent opportunity to get away from the neon lights and crowds for a little while.

Go Raw Cafe – 2381 East Windmill Lane #18, Las Vegas, NV 89123 or 2910 Lake East Drive, Las Vegas, NV 89117

If only vegetarian and vegan will do, try out one of the locations of Go Raw, either on the East of the city at the Smiths Shopping Centre, or out West at the Lakes Centre, where the cafe overlooks Lake Sahara. The salad bar looks incredible and they always have fresh and organic fruit; the main downside is that it’s a little further out of the Strip, so it might be an idea to visit an online casino on your phone while out there soaking up some sunlight and sipping tasty veggie juices and healthy smoothies.

A remarkable adaptation of a food court, casual dining takes place here underneath the cypress trees inside Caesars Palace, and is based on the theme of a “picnic in the park”. As you might expect there is a huge range of speciality food cuisines, all of which are value-oriented, but the most healthy options include the much loved Romaine Course which allows you to build your own vegetarian garden salad and Ah So, which sells healthy noodle soups, sushi and wok dishes.

An authentic experience, the B&B Ristorante is owned by the renowned celebrity chef Mario Batalio and imports its organic items from Italy – whether that’s a good or a bad thing is up to you. There are plenty of healthy meat and seafood dishes on the menu, as well as a few options for a salad if you treated yourself to a fast food burger earlier on.

It’s very rare nowadays to find a restaurant that doesn’t at least have a vegetarian option, which is always a handy fail-safe if you want to eat healthily. But the next time you’re in Las Vegas, try out one of these options for a guaranteed delicious experience that won’t send you to the gym out of guilt.

Healthy Broccoli and Onion Quiche Recipe

As you know, we’re travelling to California and New Zealand in less than a week. This means we need to get rid of perishables ASAP! What is a good way to use lots of eggs in a yummy way? Oh yeah, quiche. Now, I’ve never made a quiche of my own, but I’ve always always been a fan. My parents both make wonderful quiches in such different ways and I was excited to try it. And I am amazed how easy it is to make it! Quiches are going to happen a lot more often in this household! I was planning to have it for breakfast or lunch tomorrow, but unfortunately…none of it survived (thanks, Chris). This recipe was adapted from Whole Foods.

  • Prep Time: 10 minutes
  • Cooking Time: 35 minutes

Macronutrients

  • Serves: 8 (well, I cut it into 8 pieces…obviously just served us 2, serve yourself more if this isn’t enough and you don’t have to feel guilty about it!)
  • Calories: 98
  • Fat: 4.4g
  • Carbs: 7.4g
  • Protein: 6.8g

Ingredients

  • 4 eggs
  • 1 small broccoli (roughly 1.5 cups)
  • 1 white onion 
  • 1 cup milk 
  • 1/3 cup grated Parmesan cheese
  • 1/2 tsp salt
  • 1/2 tsp dried oregano
  • black pepper to taste
  • paprika to taste
  • 1/4 cup whole-wheat flour

Directions

  • First, grease up a square or circle baking dish and pre-heat oven to 350 degrees F.
  • Dice up the onion (don’t forget your goggles so you don’t cry!) and chop up the broccoli into small little pieces

  • Heat up a pan with oil and cook the onions until tender. Then throw the broccoli in for 5 minutes or so.

  • Put the cooked veggies into your baking dish

  • Alrighty, let’s move onto our egg mixture. Grab a large bowl and put the eggs, milk, Parmesan, salt, oregano, and pepper. Whisk whisk whisk! Then slowly mix in the flour.

  • Now pour the egg mixture into the baking dish evenly.

  • And that’s it. Now we just put it in the oven for 35 minutes. After it’s ready, let it cool before you dig in!

This recipe was so easy and so delicious. Like I said, we ended up finishing the whole tin in one meal. We are hungry and fit after all. This dish is great with some ketchup, too. I am so excited to play with this recipe and throw different veggies, spices, and meats (for Chris) into it and see what happens. To top it all off, this recipe is ridiculously healthy which helps me stay true to my goals. Just look at those macros above! Use this recipe to stay hungry and fit!

My New Love: Pho

Yes, Pho. Pronounced “fuh.” My boss took me to Saigon Xpress a few weeks ago and I consequently fell in love. You know we love noodle dishes like ramen, and this takes it to a whole ‘nother level. I had heard of Pho before, of course, and knew it had something to do with noodles, but wasn’t sure what all the fuhs was about (sorry, I had to). And then I tasted some and now I’m obsessed.

So what is Pho? Pho is a big bowl of broth, rice or egg noodles, vegetables, and whatever protein you have ordered (I get tofu). But wait, the magic isn’t done yet. Along with an absurdly large bowl of this madness, you get a huge plate of fresh bean sprouts, jalapenos,  and thai basil. Restaurants usually serve  hoisin sauce and sriracha as well for you to pour on as you please. So once you get your steaming bowl of deliciousness, you put the bean sprouts and basil in (as well as any sauces) and then stir it around. Then you may feast.

Why is it so good? The mix of fresh and hot ingredients is absolutely wonderful. And slurping up the noodles is a big favorite of mine too. For me, the real star is the thai basil. It has this minty flavor that totally zests up the entire dish. So far, I have not been able to finish my serving, even though I get a small. It’s a lot of food. I liked it so much when I had lunch with my boss that I ordered one to go for Chris later that night. I cannot wait to go again, Saigon Xpress is definitely a favorite. We tried it at Chez Thuy as well, but it didn’t compare to Saigon.

Another huge plus for me is the healthy factor. I do not feel any heaviness, regret, or guilt after I’ve finished my portion. I always feel happy, full, and content. I get my fill of liquids, carbs, vegetables, and protein all wrapped up in one healthy dish. I cannot even express the tastiness that this dish holds. Look up your local Pho eatery and go there ASAP. And if you’re near Longmont, CO, go to Saigon Xpress–you won’t regret it! Eating Pho is one great way to stay hungry and fit!

Healthy Banana Nut Muffins

These muffins are one of the best guilt-free, low-calorie, satisfying snacks for your everyday needs. Also, our bananas were nearly black. And that’s when you know it’s time for one of the many banana recipes. And being right after Thanksgiving, this was an easy choice. I added pecans for a little extra protein and healthy fat. Also, they were leftover from our sweet potato casserole. You gotta use what you got! This recipe is ridiculously easy, in fact I made two batches. And it’s uber healthy with plenty of fiber since it uses whole-wheat flour. Only takes about 15 minutes to cook and less to prepare.

  • Prep Time10-15 minutes
  • Baking Time: 15-18 minutes

Ingredients

  • 1 3/4 cups whole-wheat flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2-3 bananas
  • 2 eggs
  • 1/3 cup honey
  • 1/3 cup olive oil
  • 1/2 cup chopped pecans
  • 1/4 cup hot water

Directions

  • Pre-heat the oven to 350 degrees F and grease your muffin tin
  • Mix together the dry ingredients (flour, salt, & baking soda) in a small bowl

  • In another bowl, pour the honey and oil in and whisk it up until it’s totally mixed together
  • Now crack those eggs and mix it up with the honey and oil

  • Next, we want to mash those black bananas into a nice gooey mess. I like a few chunks of banana because that’s always fun to bite into when it’s cooked. Spoon in the bananas and stir into the wet mixture.

  • Okay! Now it’s time to marry the dry and wet ingredients. Slowly stir in the dry mixture into the wet, alternating with the hot water. Do this until both the flour mixture and hot water are gone.

  • Now it’s time to chop up those pecans into quarters and stir them into our beautiful mix.

  • Almost there! Now we want to spoon the mixture into each spot in your muffin tin, and try to make them all equal if you can.

  • Put into the oven for around 15-18 minutes. Stick a fork or toothpick in the middle to see if they’re done. If there’s tons of batter on the toothpick, leave it for a few minutes.
  • Let cool for a few minutes and then slowly scrape them out!

This recipe came out beautifully. The muffins were moist, not too sweet, and full of whole-wheat goodness. They are perfect for Chris when he has to eat breakfast on the run and perfect for me to shove in my face between clients. Don’t miss out on this easy, healthy recipe! Whole-Wheat Zucchini Chocolate Chip Bread

So one of my clients gave me a RIDICULOUSLY big zucchini. Enormous. Like an elephant trunk. I wish I took a picture of it. So what to do with this unholy piece of vegetable? At first I would cut it up and roast or fry it…but then I was still left with half of the zucchini (I would probably measure it at 2 feet). So I say to myself…why not bake something you’ve tried before? Whole-wheat chocolate chip zucchini bread, of course! I got the recipe from here and tweaked it. And I may have added a few dashes of things to make it more Falllike. This is one delicious and healthy recipe! Let’s get to it.

  • Prep Time: 20 minutes
  • Baking Time60 minutes

Ingredients

  • 2 cups whole-wheat flour
  • 2 cups shredded zucchini
  • 1 cup mini-chocolate chips
  • 1/3 cup olive oil
  • 1/3 cup brown sugar
  • 2 eggs
  • 1/2 cup chopped walnuts
  • 1/2 tsp nutmeg
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1/3 cup honey
  • 1 tsp salt
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder

Directions

  • Preheat the oven to 350 degrees F and grease a bread pan
  • First off, let’s peel and shred that darn zucchini. Remember you only need 2 cups worth, so don’t get too crazy

  • Mix all the wet stuff (honey, oil, sugar, vanilla, and eggs) until nice and smooth

  • Now add the flour, salt, baking powder and soda, cinnamon, and nutmeg!  Mix it well
  • Now stir in the zucchini, nuts, and chocolate chips!

  • Now scoop this batter into that greased up bread pan and make even

  • Now let’s put it in the oven for 55-60 minutes. Test it by sticking a fork or toothpick in it.

And that’s really it! The zucchini adds a wonderful texture to the bread. This is one great way of tricking your kids into eating zucchini by hiding it in this beautiful bread! Make sure to let cool for a little bit before serving, I know, it’s hard. Pretty simple recipe and instructions, perfect for leftover zucchini. After the first day, put in the fridge to keep the zucchini from going bad. Use this recipe to stay hungry and fit!

Easy Peasy Oat Bars

This has been on my recipe to-do list for a while now. An easy, healthy snack to bring on the go if I needed to. And to share with friends, of course. I also love recipes that are very customizable, you can add anything to this…within reason. Chris also really liked these, so I know they’re a good hit. Try this recipe out and play around with it, have fun! I got it from here, a famous blogger, but tweaked it for my own needs.

Ingredients

  • 2 cup oats
  • 1/2 cup whole wheat flour
  • 1/2 cup turbinado sugar (I will probably play around with this one too–using honey or trying without!)
  • 3/8 cup olive oil
  • 2 eggs
  • 1/4 tsp salt

  • Mix up the wet ingredients first and then mix in the dry. Stir it up until smooth

  • Pop it in the oven for 20-25 minutes. Mine was ready in about 23 minutes. Let it cool for a bit and then cut into squares

Yes, that’s how easy it is. I’m already planning to bake another batch tonight for the upcoming week. They are the perfect snack, below 250 calories and full of fiber and healthy fats. They’ll keep you satisfied for those busy hours when you don’t have time to put together a good snack or meal. And like I said, feel free to play around with it! I’m going to try chocolate chips, maybe throw some nuts in there, use honey instead of sugar, etc. Use this recipe to stay hungry and fit!
