Whole-Wheat Lemon “Cakes”

We’ve got another recipe from one of my favorite cookbooks, A Feast of Ice and Fire. My last two (one from the Wall and one from the South) were great hits and this one brings us right to King’s Landing with a spin on Sansa’s favorite lemon cakes. However, my spin, as it usually is makes these a bit healthier. I used mostly whole-wheat flour to add some fiber and make it better for our blood sugar spiking as well as using a little less sugar and using mostly honey. These are delectable little bites of yum without all the guilt that normal lemon cakes would carry.

For the cake
  1. 1/2 cup all-purpose flour
  2. 3/4 cup whole-wheat flour
  3. 1/2 cup granulated sugar
  4. 1/3 cup honey
  5. 1/2 egg
  6. 1 egg yolk
  7. 3 tbsp butter
  8. grated zest from 1 lemon
For the icing
  1. 3 tbsp confectioner's sugar
  2. 3/4 tsp milk
For the cakes
  1. Pre-heat the oven to 350 degrees F and grease a baking sheet
  2. Mix together the flour, honey, and sugar in large bowl
  3. Cut in the butter and then add egg, yolk, and zest
  4. Mix well until dough can be shaped by hand (add lemon juice if it's too dry)
  5. Roll the balls with a 1 inch circumference and place on baking sheet and then into the oven for 15 minutes
  6. Let cool
For the icing
  1. Mix together confectioner's sugar and milk
  2. Once cakes are dry, go ahead and spoon over

Pretty easy recipe, huh? The perfect pairing to this lovely bite is a nice cup (or pot) of tea. They may not be pretty in my recipe, but they have that wonderful spark of lemon that makes it taste like a lemon cake. This is a good dessert or afternoon/morning tea snack. The sugar isn’t too much, so it’s not overly sweet. I love the bitterness of the lemon pairing with the soothing honey. I can just imagine little Sansa stuffing her face with these ones.
