You ever have that time where you have vegetables that are about to go bad, but aren’t quite there? But you always seem to have an overflow of eggs? This happens fairly often in our apartment since we are always on the go. Luckily, I know just the recipe to solve this situation! When in doubt, make a quiche! This is a very easy recipe that doesn’t take much working time–and it’s great to make for the week!
"Leftovers" Quiche

A great, healthy way to get rid of vegetables and meats that are close to going bad

Ingredients
- 4 eggs
- 2 cups baby greens
- 1 onion
- 1 cup milk
- 1/3 cup Parmesan cheese
- 1/2 tsp salt
- 1/2 tsp dried oregano
- 1/4 cup flour
- black pepper + paprika to taste
Instructions
- Grease up a baking dish and pre-heat the oven to 350 degrees F
- Dice up the onion and wash your baby greens
- Heat up a pan with oil and saute your onions
- At the last moment, cook the greens
- Put the onion and greens into the baking dish
- In a large bowl, mix the eggs, milk, Parmesan, oregano, salt, and pepper
- Slowly mix in the flour
- Pour egg mixture evenly into the baking dish atop the veggies
- Sprinkle paprika on top
- Put in the oven for 30-35 minutes, check periodically
- Let cool then serve
Notes
- Remember--you can use whatever vegetables you have! And meat! And cheese!
