Hungry had a long day at work on a Saturday (yuck!) and I had a hankering for cooking, so I wanted to make him a nice dinner. I am a vegetarian while he is not, so I don’t cook a lot of meat dishes. However, tonight I would! We had some nice lean beef in the house, so I wanted to make scrumptious meatballs! However, we didn’t have any breadcrumbs…hmm… Luckily, I was able to find a recipe to base mine off of that lacked breadcrumbs. This actually turned it accidentally into a “paleo” recipe. Hungry and I are far from being paleo, but I know it’s popular right now, so maybe this will help you out!
Healthy Meatballs

A healthy version of meatballs that is easy!

Ingredients
- 1lb ground beef (we used 96% lean)
- 1 egg
- 1 clove garlic
- 4 "cloves" shallot
- 1 tsp paprika
- 1/2 tsp salt
- pepper to taste
- 1/4 tsp dried basil
Instructions
- Pre-heat oven to 375 degrees F and lay out tin foil on a baking sheet
- Press or chop the garlic
- Dice up the shallots
- Whisk the egg into a scramble in a bowl
- Mix in the rest of the ingredients until well-combined
- Use an ice cream scoop to scoop the meatballs onto the baking sheet
- Bake for 10 minutes, then flip the meatballs and then bake for another 10 minutes (20 min total)
- Serve however you'd like: by themselves, with pasta, with rice, etc!
