Healthy “Accidentally Paleo” Meatballs

Hungry had a long day at work on a Saturday (yuck!) and I had a hankering for cooking, so I wanted to make him a nice dinner. I am a vegetarian while he is not, so I don’t cook a lot of meat dishes. However, tonight I would! We had some nice lean beef in the house, so I wanted to make scrumptious meatballs! However, we didn’t have any breadcrumbs…hmm… Luckily, I was able to find a recipe to base mine off of that lacked breadcrumbs. This actually turned it accidentally into a “paleo” recipe. Hungry and I are far from being paleo, but I know it’s popular right now, so maybe this will help you out!

Healthy Meatballs

A healthy version of meatballs that is easy!

Ingredients
  1. 1lb ground beef (we used 96% lean)
  2. 1 egg
  3. 1 clove garlic
  4. 4 "cloves" shallot
  5. 1 tsp paprika
  6. 1/2 tsp salt
  7. pepper to taste
  8. 1/4 tsp dried basil
Instructions
  1. Pre-heat oven to 375 degrees F and lay out tin foil on a baking sheet
  2. Press or chop the garlic
  3. Dice up the shallots
  4. Whisk the egg into a scramble in a bowl
  5. Mix in the rest of the ingredients until well-combined
  6. Use an ice cream scoop to scoop the meatballs onto the baking sheet
  7. Bake for 10 minutes, then flip the meatballs and then bake for another 10 minutes (20 min total)
  8. Serve however you'd like: by themselves, with pasta, with rice, etc!

Hungry ate all of them in one sitting! They are healthy, delicious, and cheap. You can also freeze and refrigerate them for meals later in the week. I was a little intimidated because I don’t have a ton of experience doing meat recipes, but I was surprised how easy it was! Literally just put it all in a bowl, mix it up, and into the oven! Little healthy meatballs of deliciousness! Use this recipe to stay hungry and fit!
