Wild Boar Burgers

If you know me, you know I have a weird diet philosophy. I call myself a vegetarian, but I will eat any wild-caught fish or hunted meat. Just my desire to go back to a more natural age before the meat industry. ANYHOW, now that you know how and what I eat, let me introduce tonight’s dinner: Wild Boar Burgers and Chips. Everything homemade, of course. It actually turned out great despite my NEVER cooking boar before and rarely (pun intended) ever cook meat. Check it out

Ingredients

  • 2 potatoes
  • kaiser rolls
  • wild boar meat
  • grilled onions
  • tomato
  • spinach
  • pickles 
  • garlic
  • dried rosemary & basil
  • salt & pepper

Directions

  • First thing I did was cut up my taters. Slice into very thin pieces, so they cook into crispy chips (fries, for you Americans)

  • Now, I cooked and cut up my condiments. It’s your choice if you want to do this now or later, but this is how I did it. I grilled up some onionscut tomatoes, and pickles. I also got out some spinach to go atop the burger as well.

  • Now it’s time to tackle the boar meat. We got ours ground, so it was pretty easy. Put the meat in a sizable bowl so you can season it. You can season it however you want, but I used garlic, garlic pepper, salt, dried basil and rosemary. I use plenty of garlic, 2 cloves and slice it up. Oh, and a little dash of soy sauce.  Then dig around and make sure it’s somewhat evened out.

MEAT

  • Now have two pans with oil getting hot on the stove. Flatten out the patties semi-thin, just not thick. Put your potatoes in one pan and salt them up. Now put your patties in the other pan, put them on a medium-low heat, so they don’t get burnt on the outside while they’re cooking on the inside.

  • Now it’s really up to you to monitor the burgers and the chips. Maybe go set the table, get some drinks out. You want the chips nice and crispy and the boar burgers cooked well, but still juicy. We cooked ours for about 6 minutes. Aaaaand done!

It turned out very well, the chips were crispy, the burgers were loaded with flavor, and our bellies were very happy. I hadn’t eaten any kind of meat (last time was wild bison) in about a year. Oh, and our drink of choice, none other but gourmet root beer.

Stir Fry Creations

Stir fry is one of my favorite dishes. It’s because there are endless possibilities. And it’s so easy to do. All you need is some veggies and a form of protein in your fridge–you can mix and match and throw things together that don’t seem normal. And that’s the beauty of it! If you have veggies, rice,  and/or noodles, you have no excuse for not home cooking. Let me share with you a dish I just recently prepared, with an attempt to make it as Asian as possible for Chris.

Alana’s Monday Stir Fry

  • Prep Time: 10 minutes
  • Cook Time: 10 minutes 

Ingredients

  • a bunch of bok choy
  • 1/2 an onion
  • 2 large carrots
  • 1 yellow pepper
  • 1 case of Udon noodles 
  • 1/2 pound of wild-caught scallops
  • 1 case of tofu 
  • wok oil & soy sauce 
  • spices such as ground ginger, fresh garlic, pepper, salt, 5 spice, and garlic pepper

Directions

1. Let’s tackle the boy choy first. Wash the bok choy, scrub out any dirt under cold water. Cut until the stem is almost gone.

2. Cut the rest of the vegetables: thinly slice the onions and carrots. Do proper thick slices of the yellow pepper.

3. Put the wok oil and soy sauce in the wok (or frying pan, whatever you have) and heat that baby up! Crush some garlic in there and let the smells get you.

4. Once it is heated, throw those veggies in there. As you are tossing them in the oil, put your spices in, whatever they may be. I put in lots of ginger, garlic, and pepper. Make sure you are constantly tossing the vegetables so that your spices get on it all.

5. Cube the tofu, wash the scallops, and unwrap the udon noodles. Throw it all into the already cooking mixture. Again, make sure to keep stirring and tossing so that everything soaks up that flavor.

6. Cook to taste and decide when it’s ready! For me it took about 10 minutes, maybe not even that.

Plate of stir fryAnd there you have it, an easy 20-minute dish with tons of nutrient-filled vegetables and protein. PS- there are eggs in the picture, but I didn’t end up using them, but they are a great addition! Get creative. This is only my recipe, and it’s one of many stir-frys.

Bisque Me! Beautiful Butternut Squash Bisque

Now, I’m no Master Soup-Maker. In fact, this is my first time cooking a soup (or bisque, rather) from scratch. And it turned out really well! I got my basis for the recipe here, but I really changed this one up. Also, apologies for the lack of postings, busy lives! We’ll get back into it, we have a lot in store for you still. Alright, get ready!

Ingredients:

  • Olive oil
  • Butter
  • 1/2 onion
  • 3/4 cup of diced carrots
  • Butternut squash
  • Vegetable stock
  • Salt/pepper to taste
  • Cinnamon to taste
  • Brown sugar to taste
  • Ground ginger to taste
  • Garlic

Alright! Semi-long list but once you have everything cut up it’s easy. And the last few are to taste, throw your own ideas in there too. Ginger, brown sugar, and cinnamon just gave that nice soothing Fall flavor. So amazing on the cold nights we’ve been getting in Boulder.

Directions:

  • Cut up your butternut squash (I would roast it before hand, it was NOT fun to cut raw), carrots, and onions into cubes or small pieces.

  • Next, put some oil and butter into a big pot. I added some garlic in there too. Watch out, the smell is divine.

  • Once that’s nice and hot, pop in the onions.

  • Once the onions are nice and tender, put in the carrots and squash. And, though I’m not explicitly saying it, throughout this I’m putting in salt, pepper, garlic pepper, cinnamon, brown sugar, etc. Do it to taste. Make it your own.

  • Stir it around and then pour your vegetable stock in and bring to boil. You’re going to leave these in here, boiling, until all the vegetables are nice and tender.

  • Alright! So your veggies and nice and tender…I hope you have a blender or food processor! Because you want to throw all that mixture into that blender or food processor and blend it until smooth. Now we have a really bad blender, and although it took some time, even ours was able to blend all these. So you can do it!

  • Once that’s all blended, pour back into the heated pot. Here, you can add cream into it if you want (I didn’t). I stirred in a lot of cinnamon, ground ginger, and brown sugar in at this point to get it to that flavor I wanted to. Just stir and taste until you are satisfied.

 

And voila! You are done! Wasn’t too hard, was it? I really really suggest it as we move into winter…it is so nice and hearty. Very warm. There might be a holiday coming up where you can use this… Let me know if you have any questions!

Happy Birthday, Chris!

You’re an old man now (24 to be exact). So, I’ll direct you to this post for what we did over the past weekend (kind of our birthday weekend/week). That was all a bunch of fun, definitely some good times. His exact birthday was yesterday, September 12th. 

Anyhow, two nights ago we decide to have a joint birthday dinner. I ask Chris what he wants for dinner and he says (can you guess?)…SUSHI! So sushi it is! We invite Marga, Ben, and Megan to meet us for a 7:30pm dinner at Sushi Tora.  It was nice on the interior and very busy. We arrived in the rain, and were lucky enough to find a spot right in front! A very rare occurrence anywhere near Pearl St. Once everyone arrived, we started off with some Magic Mushrooms–a very popular appetizer there. I believe it contained salmon, mushroom, and some sort of other flavor. Looked good.

We stayed there for a few hours and ordered a lot off the menu (well, Chris did at least). I got some delicious tuna and smoked white tuna sushi (nigiri). I didn’t really like the smoked flavor of the white tuna, just because I’m so in love with white tuna (it’s my favorite, just so you know)

Chris ordered two entrees: cod and mackerel (not raw). He ate them up pretty quickly.

Megan and Marga then split a DELICIOUS tempura-battered brie with sliced apples (or were they pears?) with honey. Very very good.

Then, Marga, Ben, and Megan split a bunch of different rolls, all of which mostly contained salmon and eel, I believe. They looked very tasty.

We then ended the night with banana tempura, which was extra delicious. Very sweet and under a base of caramel, mmm! Overall, this place was good, not great, but still an excellent time with family and just enjoying the night. The price didn’t quite match the value, but it’s a big step up from Japango. Our next Sushi adventure will be at Sushi Zanmai, which is supposed to be superb. Can’t wait to try it out!

We went to bed full and happy, having had a really fun night. The next morning, we woke up to wet grounds outside and a steady trickle of rain. I looked at the forecast: 57 degrees alllll day. I knew Chris would be happy. He likes the cold. I don’t quite like the cold (sorry, I’m from SoCal), but I do enjoy my rain and it gives a great reason to stay inside and be happy. Which we did when we could. With the looming chore of the DMV before us, I wanted to take Chris out to a place that had good croissants for breakfast. So I put on my jeans and my NZ gumboots (rare recently, due to it being a usual 90 degrees and all) and we drove to Spruce Confections

It was delicious (see above). We got two croissants, one mixed berry with chocolate sconehot chocolate, and Bhakti Chai. We really enjoyed the croissants–they were fresh, buttery, and had a perfect taste. The scone was good, but didn’t compare to the croissant. The hot chocolate was soul-warming, but needed to be a tad bit sweeter, but we will definitely again. Now, the Bhakti Chai was intense. It had the strongest ginger flavor I had ever tasted in a chai before! If anyone is sick, pick up a cup of this stuff! Well, anyhow, it was an adorable little cafe/bakery with quirky girls working the shop, rain dripping down outside, and a couple of cute dogs hiding under tables waiting for their owners to hurry up with their drink. They will definitely see us here again. We can’t wait to go here during the winter, I have a feeling the scene will be perfect.

I then spent the next 3 hours in the DMV, getting a Colorado license while Chris happily sat in the car, playing a new game I got him for his birthday on his 3DS. We then both had work, but by the time 8pm rolled around, we were hungry. Chris picked me up and we discussed dinner. We had recently walked to Marshall’s and on the way, our noses were hijacked by the most wonderful smell…wafting from a big Indian restaurant (Jai Ho). So, last night, we decided to go. It was very good, very quiet, and very atmospheric. We had samosas, garlic naan, a mushroom dish, and a curry dish (which was spicy even though the waiter insisted it was the non-spicy one Chris could get). I guess we’ll need to say “non-Indian non-spicy” next time.

He also got a lot of great birthday loot, including some video games, music, checks, and cards, so thank you everyone!! Cheers 🙂

Stuffed Mushrooms–Nom Style

So I completely stole this from a fellow blogger I’ve found through hunting food blogs. Her blog is thedomesticatedfeminist, I encourage you to check her stuff out–delicious recipes! The one I most currently stole, are Stuffed Mushrooms. And of course, with any recipe I find, I alter it slightly (not because I’m creative, but because I’m poor and don’t have all the ingredients). My philosophy is that you should cook with what ya got in your kitchen! And it helps with the wallet too.

Okay, so let’s get your ingredients ready! Oh, and I also made garlic bread.

Ingredients (stuffed mushrooms):

  • 4 mushrooms
  • 1 tomato
  • big handful spinach
  • 2 cloves garlic
  • lemon juice
  • dried basil
  • cheddar cheese
  • brie 

Ingredients (garlic bread):

  • loaf of french bread
  • garlic
  • butter

Directions (garlic bread):

Okay! So first, let’s get started on the garlic bread because it needs sometime to bake.

1Pre-heat the oven to 375 degrees

2. Cut the garlic bread with a good bread knife so that the knife goes almost all the way to the bottom, but you don’t wholly cut through it.

3. Stir up a mixture of butter and garlic (I used two cloves)

4. Next, you want to use a butter knife and spread the garlic butter through each slice you’ve made (remember, you don’t want the slices to be separated from the loaf)

5. Pop it in the oven! I’d say for around 10-15 minutes (just keep checking it to make sure the bread doesn’t burn)

Directions (stuffed mushrooms)

Ahhh, now the good stuff!

1. Before we stuff ANYTHING, we need to roast up the tomatoes and spinach: put olive oil and garlic into a pan and throw the tomatoes and spinach in

3. Don’t forget pepper&salt!

4. Let that rest while you fix up the mushrooms.

5. Time to clean the mushrooms. Simply hold under cold water and scrub with your hands, inside and out. Also, take out the stems of the mushrooms. Place on pan.

6. Now we want to make a magical mixture consisting of olive oil, garlic, and lemon juiceWhisk that up. We want enough to fill each mushroom.

7. Pour mixture into mushrooms

7. Now, whatever cheese you have in the house, chop it up! You don’t need many pieces. We had brie and cheddar cheese in our apartment, so that’s what I went with. You want to chop it up into small cubes (or something similar to that)

8. Now, put in the cooked tomatoes and spinach that you roasted beforehand. Try to make them even so you don’t upset your loved ones by being unfair.

9. Place the pieces of cheese on top. Then sprinkle dried basil over it.

10. Aaaand, pop them in the oven. Remember it’s on 375 degrees. I left them in for around 12 minutes.

And Voila! Some wonderful cooked mushrooms.
