Cinnamon Whole-Wheat Apple Bread

Since we’ve finally settled into our “new” place, I’ve been scouring the web and the bloggers I follow for new recipes to try. It’s just something about being in the kitchen, creating, and enjoying it. I’m happy to have been doing more recipes lately. I was inspired by Cookies and Cups to do a cinnamon whole-wheat apple bread–a little healthier version of the typical snickerdoodle apple bread. It was extraordinarily easy to make, and let me tell you, the batter was delicious. Not that I ate too much… I always love trying and creating different treats that don’t make me feel bad afterwards. I can add this one to the list.

Cinnamon Whole-Wheat Apple Bread

For the bread
  1. 1 apple (I used gala)
  2. 2 eggs
  3. 1/2 cup butter
  4. 1 tbsp vanilla
  5. 3/4 cup brown sugar
  6. 1/4 cup granulated sugar
  7. 1/2 tsp salt
  8. 1 1/2 tsp baking powder
  9. 1 1/2 cup flour
  10. 1/2 tbsp cinnamon
  11. 1/2 cup milk
For the cinnamon sugar topping
  1. 2 tbsp granulated sugar
  2. tsp cinnamon
Instructions
  1. Preheat the oven to 350 degrees F
  2. Spray/oil up a loaf pan
  3. Chop up the apple into bits
  4. Mix together salt, baking powder, and flour
  5. Beat sugar, both sugars, and cinnamon until smooth
  6. Then, add eggs and vanilla
  7. Mixing slowly, add the flour mixture and milk alternatively
  8. Stir in apples
  9. Pour batter into loaf pan
  10. Mix together the cinnamon and sugar and layer the top
  11. Bake for 50-55 minutes until you can stick a fork in and come out clean

This can feed many. And if you can’t finish it all at once, it’s lovely to toast up and serve for tea. You can even put butter on it if you’re feeling saucy. There isn’t much work that goes into this–perhaps cutting the apples takes the most time (how pathetic!). I’m sure it would be wonderful with white flour as well, but I typically stick with whole-wheat just for the added whole-grain benefits. Again, baking is wonderful therapy.
