Blueberry Cashew Topping

We’re still eating clean for the most part over here at Hungry & Fit headquarters and that means getting creative when we have sweet tooths (teeth…). Hungry recently came up with this divine topping (or sauce) to put on breakfast or “desserts.” I was absolutely blown away when he served it to me atop a stack of Kodiak pancakes (healthy pancakes). I was like, well someone got carried away, is this still healthy? And guess what–it was! I was shocked when I learned the ingredients for this beautiful, delicious topping: blueberries and cashews were the main components. Each bite was like a slice of heaven–the cashews were just soft enough to ease into your mouth and melt while the blueberries soothed everything out. Okay, enough dreaming, let’s get to the real stuff!

Ingredients
  1. 2/3 cup blueberries
  2. 2/3 cup cashews
  3. 1/4 cup applesauce
  4. 1 tbsp brown sugar
  5. 1 tsp honey
  6. 1 tsp balsamic vinegar
Instructions
  1. Roast the cashews with the honey
  2. Throw rest of ingredients in and simmer for 5 minutes

Yeah, 5 minutes is accurate! As you are frying up those pancakes, heating up those waffles, scooping that froyo, heat this up in a pan! You and your family will be thanking me this weekend. It’s an easy way to trick the kids into liking something healthy! It’s a perfect weekend breakfast addition. It’s easy and anyone with a heat source and a pot can make it. It also isn’t too sweet. I’m not a fan of most pancake toppings because there’s way too much sugar. This balance is absolutely wonderful. Make this recipe to stay hungry and fit!

Healthy Halloween Snack

PUMPKIN SEEDS. Yup. I know that you’re probably chock full of unhealthy Halloween treats like candy, pumpkin-flavored sugar bombs, and things that are weighing you down. So in between your sugar comas, try making this healthy Halloween snack: toasted pumpkin seeds. Plus, it’s incredibly easy. Takes almost no effort and the time is just in the baking of the seeds. Pumpkin seeds have a good amount of protein per ounce!

Healthy Oatmeal Chocolate Chip Cookies



Don’t you just wish you could gnaw on? Something tasty that didn’t sit like a rock on your stomach? Some kind of dessert…maybe cookies…chocolate chip cookies…sounding better by the minute! I have a solution for you as we near swimsuit season: healthy oatmeal chocolate chip cookies (they ALSO have raisins–added bonus). This recipe is very simple and features a new protein powder we’ve been trying!

It’s called Clean Lean Protein by NuZest (a kiwi company! How do we get so lucky?!)–and the ingredients are rather incredible. Most have no more than five ingredients and it’s composed of things like “Pea Protein Isolate,” “Vanilla,” “Strawberry,” “Red Beet” and other wonderful things. Tomato Avocado Salad

In the past few weeks, Hungry and I have kicked up our fitness level to a certain degree. It’s been going fairly well, and we are a mission to achieve our goals and stay healthy! It’s not always easy. We have busy lives, a not-so-great neighborhood, and everyday troubles. However, we rise above and keep fighting for our passion! To go along with that are healthy recipes. Recently, our fridge and pantry have been chock full with delicious fruits and veggies. We’ve been getting great prices on avocados from Trader Joe’s which we’ve been certainly using to our advantage. We’ve been making different things like caprese salads, roasted tomato on toast, and yummy spinach recipes too. In this case, I simply combined a few ingredients to create something very tasty: a tomato avocado salad.

Cinnamon Whole-Wheat Apple Bread

Since we’ve finally settled into our “new” place, I’ve been scouring the web and the bloggers I follow for new recipes to try. It’s just something about being in the kitchen, creating, and enjoying it. I’m happy to have been doing more recipes lately. I was inspired by Cookies and Cups to do a cinnamon whole-wheat apple bread–a little healthier version of the typical snickerdoodle apple bread. It was extraordinarily easy to make, and let me tell you, the batter was delicious. Not that I ate too much… I always love trying and creating different treats that don’t make me feel bad afterwards. I can add this one to the list.

Last-Second Valentine’s Day [Healthy] Treat

You have a busy life, a busy schedule, or maybe you just forgot. Well, it’s Valentine’s Day today, so if there’s someone special in your life, you should make sure that they know you feel that way about them. If you didn’t get them anything (don’t fret, there’s still time)–or if you want to do a little something extra–you’re in good hands! I was inspired by Life with spices to make a healthy version of a “red velvet mug cake” just in time for V-Day. Even if you’re not romantic, this will put a smile on your partner’s face. Plus, even though it seems decadent and delicious, it actually has decent ingredients! Gotta love guilt-free baked goods. This takes, all in all, four minutes. No oven, just microwave. NO EXCUSES. Let’s hit it.

Healthy Oatmeal Raisin Cookies

I think I talked many times about how baking is therapy. Not shoving sugar in your face, but the act of baking itself. It’s the act of creation and producing something, I think. Also getting to work with your hands helps too. Bringing several ingredients together to make something completely different is fun and satisfying. The process consumes you so you aren’t thinking about the challenges or difficulties in your life. Also, another great byproduct is the delicious things themselves! However, we don’t want to feel guilty about eating this “invention,” we should instead enjoy them. 

This recipe is based on of this one here. It’s an incredibly easy recipe that’s hard to go wrong (just make sure you measure). It doesn’t take many ingredients, in fact, if you bake often, you’ll probably have most of them in your pantry. Sometimes Hungry doesn’t like when I bake “healthy” recipes, but I’m thinking that this time he did because they didn’t last over 24 hours (and there were at least a dozen of them). Praise to healthy oatmeal raisin cookies! This recipe is a crowd pleaser without making you feel the guilt!

Vegan Mushroom “Stroganoff”

Recently, some friends and I have been having “movie nights” (actually during the day) where we eat and watch a movie. This past time, we all brought food to share. I planned on making a vegan dish that our friend who doesn’t eat cheese or soy could eat. Now, I didn’t actually make it in time for this get-together, but I eventually did successfully complete it! And boy was it worth the wait! I made a vegan mushroom stroganoff. This dish is full of flavor, with the mushrooms giving that depth and heartiness. Since we live in Koreatown, there aren’t a lot of typical noodles, so we used udon noodles! It actually turned out well. Chris has been eating it every day for work, as this recipe makes a great deal of food. Let’s get to it.

Vegan Mushroom Stroganoff

A yummy substitution for its beef counterpart

Ingredients
  1. 8 oz package of any type of noodle
  2. 1 onion
  3. 1 tbsp olive oil
  4. 3 tbsp whole wheat flour (not all used at once)
  5. 2 cups vegetable broth
  6. 1 tbsp soy sauce
  7. 1 tbsp lemon juice
  8. 1 tsp tomato sauce
  9. 1.5 lbs mushrooms
  10. 1/2 tsp dried sage
  11. 1/2 tsp salt
  12. 1/2 tsp thyme
  13. 1 tbsp rice vinegar
Instructions
  1. Chop the mushrooms into 2 inch pieces and slice up the onions
  2. Cook the noodles as per directions on the package (undercook them slightly)
  3. Drain and set aside
  4. In a large saucepan, saute the olive oil and onions
  5. Add two tbsp of whole wheat flour and stir constantly for 30 seconds
  6. Slowly add the broth, soy sauce, lemon juice, and tomato sauce until mixture starts to become thick and bubbly
  7. Add mushroom, sage, salt and thyme and stir
  8. Cook for about 5-7 minutes until mushrooms have shrunk and absorbed juice
  9. Add vinegar and continue to let simmer for 5 minutes
  10. Now, add the noodles alongside another tbsp of flour
  11. Serve hot!

I am very pleased with how this dish came out, and it was inspired by One Green Planet. This is a great dish for anyone and everyone because it’s vegan and has no soy. It holds well for leftovers as well as the mushrooms continue to marinate with flavor. It’s very simple, the only time-consuming part is chopping up the mushrooms and onions, and even then it’s not a very long time at all. I’d be interested to see all types of noodles work with this, so please share if you decide to make it. It’s a perfect winter dish–full of flavor and warmth. It’s even been cold here in Los Angeles with temperatures of 39 degrees in the morning! That is cold for LA, let me tell you. Please enjoy this warm dish and as always, stay hungry and fit!

Chocolate Coconut Oat Bites

To say the least, life is freaking hectic. You have responsibilities ranging from a full-time job to kids to pets to your health to education! You get out of breath just going through your list of responsibilities! Or at least I do. Life is stressful and there’s no way around it except to roll with it. How do you roll with it? By making life easier for yourself along the way!

A big part of our life is food (surprise surprise). We don’t want to skip meals or snacks, but at the same time, we don’t always have a lot of time to prepare those meals. So, I create recipes like this one, in order to keep us fueled on the go. It’s important to us that we eat healthy on the go, but it should taste good too! So…along comes Coconut Chocolate Oat Bites. What a wonderfully delicious name. With the help of Silk Coconutmilk, we were able to create one of the simplest healthy recipes for those on the go. Can you tell I’m excited about it? Chocolate Coconut Oat Bites

Ingredients
  1. 1 cup oats
  2. 1/4 tsp cinnamon
  3. 2.5 tbsp peanut butter
  4. 3 tbsp maple syrup
  5. 3 squares dark chocolate
  6. 2 tbsp Silk Coconutmilk
Instructions
  1. Heat the peanut butter, maple syrup, and Silk Coconutmilk together over low heat in a pan.
  2. Have oats and cinnamon mixed together in a bowl
  3. Once warm, pour the peanut butter mixture into the oats and cinnamon and really stir.
  4. Break the squares of chocolate into small pieces
  5. Once it is mixed well, fold in the pieces of chocolate
  6. Cover and put in the fridge for 20 minutes
  7. Take out and roll into small balls and store in fridge

I’m going to keep these in a zip-loc in the fridge at home AND at work, because you never know when you need a snack. It’s important to have a healthy snack accessible, because if not, you’re just going to binge on Red Vines and Sun Chips and then feel bad about it later. Healthy Chocolate Protein Truffles

Summer is slipping away, bikinis are being put back in the drawers, and the trench coats are coming out. This may put us in a “in-the-grind” type of mindset where we push ourselves to work hard, stay relaxed, and put our health on the back-burner. Stop right there! Just because we aren’t donning our swimwear, does not mean that we can let health and fitness slip away! We still want to feed ourselves in a nutritious manner and keep our movement flowing.

These healthy chocolate protein truffles will bring you to that fitness mindset. They are incredibly easy to prepare and also easy to pop in your mouth! The whole thing took me about 7 minutes to make, and by the time it’s morning–they’re ready! This recipe inspired me. They are chock full of protein and only sweetened by honey. I also use Silk Vanilla Soymilk to give it some yummy vanilla flavor while keeping the calories down.

Ingredients
  1. 3/4 cup chocolate protein powder
  2. 1/3 heaping cup cocoa powder
  3. 2 1/2 tbsp butter
  4. 1 tbsp honey
  5. 5 tbsp Silk Vanilla Soymilk
  6. 2 tbsp ground almond
Instructions
  1. Mix all ingredients together (doesn't matter in what order)
  2. Form into small balls and place on a baking sheet with parchment paper atop
  3. Put in the fridge for a few hours or overnight
