Fresh Avocado Tomato Salad
With Spring here and it feeling like Summer in California, the desire for fresh food comes forth. Raw, fresh food but certainly not lacking flavor. So it was, a Saturday night, hanging with my brother and his girlfriend, Sophie. Sophie is an excellent cook and has a lot of experience doing so. She was going to make us tacos–perfectly cooked steak for everyone and wild-caught fish for me. I was all in. Growing up in California, tacos become your soul food. Along with tacos, come the necessity of the avocado in one’s life. Rich with delicious healthy fat and the creaminess to save any dish, I was ready to be her sous chef and make the side dish–fresh Avocado & Tomato salad.
I’m fairly decent at making avocado dishes as you’ve seen here. All you need is salt, acid, and the smoothness of the avocado and you are in for a wonderful bite. This recipe uses fresh veggies. Get good ingredients for this one. It’s great for a side dish, topping for tacos (as we used them), or a general party-pleaser. Break out the swimsuits and the salad!
- 4 avocados
- 4 tomatoes
- 1 tsp salt (perhaps more, make sure to taste)
- 2 tsp lime juice
- 2 tbsp fresh cilantro
- 1 clove garlic
- 1/2 shallot
- Dice thick pieces of tomatoes and avocado
- Chop up cilantro, garlic, and shallot
- Mix all in a bowl
- Make sure to taste to find out if you need more salt, lime juice, or cilantro
It’s an easy, healthy dish. It brightens up any entrée and is sure to make your friends happy. The hardest part of this isn’t hard, just time-consuming: chopping everything up. You want to make every piece into nickel to quarter-like sizes. We can call it “bite size.” It’s very important to taste throughout the construction of this dish. The salt, lime juice, and cilantro ratios are essential to get right. You want to be able to taste every part without being overpowered or bored by any component. This recipe is perfect for staying hungry and fit!
