Fajita-style Quesadillas

I know how tough it is thinking of snacks to prepare when you are on a tight budget. You don’t need to spend a lot of money by ordering pizza from some fancy pizza places just to please your friends. I am going to share this simple snack that is both cheap and healthy. I know it’s hard to believe, but there are actually snacks that are below one dollar per serving.

While your friends are busy playing  their favorite game on their iPad or laptop, you can start preparing this delicious snack. It will only take you around 30 minutes to prepare and cook this dish so you have more time to play at partycasino.com/. This is a great website because it gives you a chance to win some nice cash. Ingredients: 

  • ½ medium onions (sliced thinly) 
  • ½ medium red or green bell pepper (cut into strips) 
  • 1 piece serrano pepper (seeded and cut into strips) 
  • 2 tomatoes (sliced thinly) 
  • 4 pieces 6-inch white corn tortillas 
  • 2 teaspoons vegetable oil 
  • 1 tablespoon fresh cilantro (snipped) 
  • ½ cup grated Monterey Jack cheese 
  • Non-stick cooking spray

Directions:

  • Cook the onions, bell peppers and serrano pepper in oil over medium heat for three minutes or until the vegetables are tender.
  • Use a cooking spray to coat one side of the tortilla. Put the vegetable mixture on top of the uncoated side of the tortilla and add some tomatoes, cilantro and cheese. Fold the side with the coating over the uncoated side.
  • Cook the quesadillas on a large skillet over medium heat for five minutes or until the cheese melts. Cut the quesadillas into four parts and serve warm.

You can serve the fajita-style quesadillas on a platter with a small bowl of sour cream, lime wedges, and cilantro.
