The Shortcut to Making Mango Sticky Rice

If you’ve read our Jitlada review, you know we are a sucker for well-made mango sticky rice. What is mango sticky rice? It’s basically sweet sticky jasmine rice flavored with coconut with fresh mango on top. It’s simple, it’s sweet, it’s satisfying. It is especially satisfying after a spicy meal that you usually find at most Thai restaurants! Mangoes have been off-the-chain in season right now in California, meaning they are cheap and taking lots of room in our pantry. I’ve wanted to make my own mango sticky rice, but I was always too intimidated about the rice part. That is, until I found my hack. 

Jet Tila is one of our favorite chefs and he came out with a stellar cookbook a few years ago called 101 Asian Dishes You Need to Cook Before You DieAnd guess what was in there? Yup. Mango Sticky Rice. Still, I was nervous about the rice. I didn’t have a bamboo steaming basket and I had no sticky rice. So, I went to the grocery store and I got creative. I scoured the Asian foods aisle, hoping that some divine idea would strike from the florescent lights above. And it did! There it was. VeeTee microwavable Thai Jasmine Rice. Yes, yes, I know it’s not authentic, and it’s not nearly as good as doing it right, but I needed a shortcut and I found it. This isn’t a sponsored post for VeeTee, so really any Thai jasmine rice will work. And you know what, the dish turned out pretty dang good and took hours less time and fewer contraptions. Sometimes, I have time for long, intricate recipes, and sometimes, I, well, don’t.

Honey Spiced Cookies

Does it bother me that maybe there should be a hyphen in the title? Kinda. But I actually purposefully left it out to keep it vague and free. Anyhow. I bring you Honey Spiced Cookies based on the Honey Biscuits recipe from A Feast of Ice and Fire (aka Game of Thrones cookbook for those of you who *scoff* didn’t read the books). This is an incredible cookbook! I can’t recommend enough. It’s all based on foods that George RR Martin wrote into the books, and it splits the recipes into the different regions of Westeros. I’ve made several recipes from this cookbook such as applecakes and bread (both recipes serving the faithful Night’s Watch at the Wall). This recipe comes from the South from Lord Caswell’s kitchen. 

These honey spiced cookies are warm, soft, and wonderfully potent with spices like pumpkin and ginger. The recipe takes under fifteen minutes and does not have a long ingredient list (honestly, if it’s too complicated, I don’t even want to make it). This recipe is probably best suited for warmer months due to its fall/winter-like spices, but I made this in a California heat wave (90 degrees F, ya’ll), and we still finished all of them in 1.5 sittings between the two of us. I mean, who says no to cookies based on the season?! Get real.

5 Healthier Recipe Ideas for 4th of July

July 4th is literally tomorrow and I bet a good amount of you are going to some kind of event. Do all of you have the dish in mind that you will bring? If the answer is no, we are here for you! July 4th is for relaxing, catching up with family and friends, and usually consuming food and alcohol. At most of these events, be it party, BBQ, whatever, there will certainly be lots of food. And a good amount of it will not be healthy. And you know here at Hungry & Fit, we are fine with living it up. But what it’s all about is moderation. 

So, we have come up with a list of 5 Hungry & Fit healthier (but still very tasty) recipes that you can whip up and bring to your event. Your friends and family will be impressed that you made it yourself and didn’t just buy from the store! We’ve brought you a mix of savory and sweet dishes perfect for this American holiday. Remembering Anthony Bourdain

There truly are only a handful of individuals in the culinary world that truly brought something new to the table. One of those individuals, Anthony Bourdain, has left the table, and with that, a seat that will be extremely hard to fill. 

While I enjoyed cartoons and sports growing up like every other kid, I watched more food television than most kids my age. For Christmas, I’d ask my mom for microplanes, honey dippers, and other obscure cooking utensils to feel more like the chefs that I idolized on television. She’d let me help with food prep in the kitchen and might even let me make my own dish from time to time, knowing full well that it’d end up being inedible. (Note, I was VERY young when this started.) My fixation for in-the-kitchen cooking shows like Emeril Live, Good Eats, Two Fat Ladies and many others, over different channels, never completely faded, but after watching these for years and years, I need new inspiration.

Whole-Wheat Chocolate Chip Banana Bars

What do you do when you have over-ripe bananas to be used? Bake, of course! But what to bake? Normally I would make these sweet banana cookies, but we are all out of oats! So I browsed the internet hard to find me something on the healthier side that featured bananas. And…drum roll, please…I came up with whole-wheat chocolate chip banana bars (found it from a great blogger’s site)! Banana bars? Sound weird? They’re not. It’s basically brownie-shaped banana bread with chocolate chips. Yeah, they’re good. Hungry brought them to work and he got major points from his coworkers. 

The texture of the banana bars are cake-like rather than brownie-like, light and fluffy. Some hybrid of banana bread and cake. It’s yum. What makes this recipe healthier? Whole-wheat flour, no butter, and not too much sugar. Yeah, there are chocolate chips in it, but I mean, you got to live a little. Some baking recipes are complicated. This one is not. It’s basically mix together, put into sheet pan, and bake. And you know I love easy recipes. Alright, let’s make these delicious banana bars.

Easy Chickpea Curry

Watch out, another “Indian” recipe! This time from Martha Stewart (ha!). Though nobody would venture to say Martha Stewart is Indian, I also think nobody would say she’s a poor cook. She’s legendary. I’ve wanted to involve more chickpeas in my diet for a while, but laziness prevented me from actually looking up recipes and finding ways to use them. Sure, I could use them in salads, but what about cooked recipes? I did a quick search and came up with Martha Stewart’s EASY chickpea curry. Like really easy. Like just throw spices and cook chickpeas together easy.

I altered Martha’s recipe into my own easy chickpea curry that would fit my needs and–more importantly–my ingredients. This recipe is a great whip-up-at-home-quickly-after-work dish when you don’t have a lot of time but would like to have something tasty and nutritious. I felt great about eating it! And curry is a heavy word for this dish, it’s really just stewing chickpeas in spices and liquid. Let’s get cooking.

Easy Mushroom Coconut Curry

Yeah, I’ve been on an Indian food kick lately. I mean, I’m always on one as a consumer, but in the past week, I made three different Indian dishes. Hopefully, you already saw the delightfully easy and delicious naan recipe I put out. And today…I bring you a delicious mushroom coconut curry! I really really enjoyed it. We received Vegetarian India (a cookbook) by Madhur Jaffrey, a well-known Indian chef and cookbook author, as a wedding present. I’m really loving this cookbook and can’t wait to try more from it.

This recipe is based off of her recipe called “Kodava Mushroom Curry with Coconut,” though I deviated quite a bit. Get her cookbook if you want the exact recipe–she’s a genius! Apparently, this dish comes from a more meat-eating region in India and thus she was fascinated by their vegetarian dishes. It’s rich, scrumptious, and filling. She suggests to have it with rice, but we had it with quinoa. I think it would go well with anything–rice, quinoa, naan, paratha, you name it!

How to Make Naan to Be Proud of

Here at Hungry & Fit, we are BIG Indian food fans. It competes with pizza for our most-delivered food. We love the flavors, the complexity, and the comfort it brings. I’ve always wanted to cook more Indian food since we love it so much, but I was intimidated by the many ingredients you usually need. Naan, however, seemed to have less ingredients and it is probably my favorite “bread” product on the planet. So one day, I find this wonderfully simple naan recipe from Jo Cooks and I committed myself to trying it. I tweaked the recipe slightly because I’m usually too lazy to get the exact ingredients that the original recipe uses. I can proudly say I now know how to make naan

I was nervous to try it. I’m bad with tedious things and sometimes recipes that call for rolling and cutting dough are just that. I don’t even have a rolling pin! Naan is one of my favorite things to eat and I wanted to do it right. Feeling creative and ambitious one night, I set out to make my very first naan. And guess what, it turned out great if I do say so myself! And don’t be nervous, it’s honestly incredibly simple.

Easy Overnight Oats

It’s Sunday! What does that mean? Meal prep time! This is when we prep as much food as we can for the week so that being tired and short of time doesn’t force us into making unhealthy decisions. For this week, I’m highlighting easy overnight oats. There’s actually no cooking required in this recipe, just a tiny bit of prep work (and I mean tiny). What are overnight oats? Dry oats that soak and become edible overnight.

This is a healthy recipe (that I adapted and tweaked from Chocolate Covered Katie) that will get your rear into gear during those sleepy struggle mornings. Basically, you’re just stacking ingredients in a mason jar, putting it in the fridge overnight and then eating it the next morning! I love it because when you actually need it, you don’t have to put any work into making it. The mornings are an important part of my day for personal development and productivity so “hacks” like these are vital! I can just go through my normal routine without spending an extra 10-15 minutes prepping breakfast. Weehaw, more productivity time!

Healthy Enchilada Quinoa Casserole

Last month, I had the wonderful opportunity to spend a lot of time with my family in Iowa, although it was for the sad reason of my grandfather’s funeral. Funerals are always difficult, especially of a loved one, but there’s that bright side of family and togetherness that makes it bearable. Every meal time we would gather round the table (there were quite a few of us) and eat and laugh and cry. Definitely healing for the soul, I would say. 

It was spending this time together that brought this amazing new recipe into my life: my cousin Molly’s healthy enchilada quinoa casserole. I can’t tell you how much I ate of this dish. A lot. Like, a lot a lot. It was filled with such healthy and yummy goodness that I couldn’t stop. Just something about a warm nourishing dish in the last throes of winter (yeah, we got 7 inches of snow DURING APRIL). The dish focuses on latin flavors while boasting healthy nutrition facts. The base of the dish is quinoa, but so many others are invited to the party: beans, corn, cilantro, avocado and more. As soon as I tasted the menu, I begged her to write up the recipe and send it to me! So this one, folks, is all thanks to Molly!
