Instant Pot Fish Curry

If you’ve been anywhere near Fit’s social media recently, you’ve noticed she got an Instant Pot for her birthday! She is equally terrified and excited by it. An Instant Pot is basically a pressure cooker. For example, it typically takes 30-50 minutes to cook rice in a traditional rice cooker. With the Instant Pot, it takes four minutes. FOUR MINUTES. WHAT. Yeah. Very exciting. But also terrifying because…explosions. As long as you follow directions, you’ll be fine! So Fit’s been experimenting with it for a bit, and trying different recipes. Using Instant Pot’s included recipe booklet (recipe by Laura Pazzaglia), she made a scrumptious fish curry! I had already made brown rice before and wanted something healthy and flavorful to go with it. What better than wild caught white fish? This curry has a coconut milk base with different flavors like bay leaves and tomatoes to freshen it up. 

Remember, with an Instant Pot, follow the directions!

Ingredients
  1. already-cooked brown rice
  2. .76 lbs fish filet, cut into bite-sized pieces
  3. 1/2 cup cherry tomatoes
  4. 1 serrano chili, sliced into strips
  5. 1 garlic clove
  6. 1 onion, sliced into strips
  7. 1/8 tsp ginger powder
  8. 4 bay leaves
  9. 1.5 tbsp curry powder
  10. 1 cup unsweetened coconut milk (can add more if desired)
  11. 2 tsp salt
  12. 1 tbsp olive oil
  13. lemon juice
Instructions
  1. Select the "Saute" function on the Instant Pot. When "Hot" appears on display, add some oil and drop the curry leaves until golden around the edges.
  2. Then, add onion, garlic, and dried ginger and saute until onion is soft and flavorful.
  3. Add curry powder and mix them into the onions until aroma is released.
  4. De-glaze the pot with coconut milk.
  5. Add serrano, tomatoes, and fish. Stir and make sure fish is coated.
  6. Close and lock lid. Select "Manual" and adjust pressure cooking time to 3 minutes.
  7. After time is up, use the Quick Release method (turn Instant Pot off and turn pressure valve to vent). Add salt and lemon juice before serving.

You can decide what grain you want to have with this dish. We used brown rice AND I made some homemade naan. So yum. This dish is really easy. The hardest part is chopping everything up which…isn’t hard. But yes, you do need an Instant Pot for this recipe. Are you guys interested in more Instant Pot recipes?
