Crustless Kale Quiche

It’s one of those mornings…when you’re still eating quite healthy, feeling a little lazy, and want to have something yummy. You also need to clean out your fridge. What to do….quiche! We keep it crustless to keep the unneeded carbs and bad fats out and we throw in whatever may go bad in the following week. For our fridge, we had a whole lot of kale that I wanted to go through. Kale is a wonderful green and gives a nice texture to a quiche. You can follow my recipe, or you can use it as a base and throw what you want into it! Grab some eggs and here we go…

Crustless Kale Quiche

Ingredients
  1. 4 eggs
  2. 2 cups kale, chopped
  3. 1 onion
  4. 1 cup milk
  5. 1/3 cup shredded Parmesan
  6. 1 tbsp balsamic vinegar
  7. 1/2 tsp salt
  8. 1/2 tsp dried basil
  9. 1/2 tsp dried rosemary
  10. 1/4 cup whole wheat flour
  11. sprinkle of paprika
  12. black pepper to taste
Instructions
  1. Pre-heat oven to 350 degrees F and grease up an 8x8 baking dish
  2. Chop up your vegetables
  3. Once onions are diced, cook them in a pan
  4. Briefly cook the kale with the balsamic vinegar
  5. Put cooked veggies into the baking dish
  6. In a bowl, mix the egg, milk, basil, rosemary, Parmesan, and salt
  7. Slowly mix in the flour
  8. Pour the egg mixture on top of the vegetables
  9. Sprinkle black pepper and paprika on top
  10. Bake for 35 minutes and let cool before serving

Pretty easy to whip up. The hardest part about it is all the crying you’ll do while you cut the onions. This is a saving grace during the week when you’re too rushed in the morning to make a proper healthy breakfast. Heat this baby up and you’re good to go! For some reason, no matter how good the quiche is, I always like to eat them with ketchup. There’s nothing fancy about it. It’s very straightforward and keeps your body happy. And remember, get creative with it! Throw some meat in there, put some more vegetables, go crazy! Use this recipe to stay hungry and fit!
