Chocolate Peanut Butter Protein Cookies (No-Bake)

Could you have a better combination of words? Chocolate Peanut Butter Protein Cookies. Yum. Oh and don’t forget the no-bake part! What! I was so excited when I saw this recipe that I had to make my own variation! You may get that I’m excited due to the back-to-back exclamation points. This was an incredibly easy recipe. As I was putting it together, I kept thinking, is this really going to work? Spoiler alert: it worked and it’s damn delicious! There is no cooking time to these cookies and they are chock-full of protein! Often times, adding protein powder to baked goods can give them weird textures and flavors. Not this one! You wouldn’t even suspect that there was anything added to these cookies besides deliciousness.

For the cookies
  1. 1/2 cup creamy peanut butter
  2. 1 1/2 tbsp honey
  3. 1/8 tsp cinnamon
  4. 3 1/2 tbsp cinnamon protein powder (chocolate or vanilla would be delicious too)
  5. 1/2 tsp vanilla extract
  6. 1/2 cup oats
  7. 1/4 cup your choice of cereal
  8. pinch of salt
For the frosting
  1. 3 tbsp chocolate chips
  2. 1 tsp olive oil
  3. 1 tsp same protein powder
  4. sprinkle of cinnamon
For the cookie
  1. Mix together the peanut butter and honey and put in microwave for 30 seconds
  2. Add vanilla extract, salt, cinnamon, and protein powder and then mix
  3. Add the oats and cereal and stir well
  4. Roll into balls and place as "cookies"
For the frosting
  1. Combine chocolate chips with oil and put in microwave for 15 second increments, stirring until finally melted
  2. Stir in protein powder and cinnamon
  3. Spread over cookies

This recipe is perfect for breakfast or a quick snack. You don’t have to feel guilty scarfing these ones down, there’s not much sugar in them! I bet you even your kids will like them! You can make these the night before or the day of because it takes less than 7 minutes. You can refrigerate them if you’d like, but it’s not necessary. This a great healthy recipe that will get you kicking your day’s butt! My only problem with this is that I should’ve made more of them! Try this recipe to stay hungry and fit!
