No-Bake Chocolate Mousse Cake (Vegan)

This weekend, I was lucky enough to have a playdate with my two friends who are married. Besides stuffing me like a little piggy with delicious food, we also got to make it from scratch! This was alongside a marathon of Once Upon a Time season 4 that just got uploaded to Netflix! Can you say a good Saturday? Heck yeah. One of my friends is a vegan (mostly) and she had been talking about this vegan cake forever. I was finally getting my chance to make, and more importantly taste it! The one, the only no-bake chocolate mousse cake! She goes off of this recipe

This recipe may seem intimidating, but I can honestly tell you that it was over before I knew it. A food processor certainly helps, though! Close your eyes. Imagine a velvety, smooth mousse atop a nutty-chocolate crust. And then after, imagine no guilt, but instead feeling the healthy fats helping your body thrive! Yep, ladies and gentlemen–a HEALTHY chocolate cake. And doesn’t it feel rather warm out? I’d say so. Guess what: this recipe is a NO-BAKE recipe! Thank goodness! The oven always gets our apartment cooking. So take some time today, make this cake for a special someone, and don’t tell them how healthy it us until after they eat it! No-Bake Chocolate Mousse Cake (Vegan)

A delicious, healthy alternative to a chocolate creamy cake!

Crust
  1. 2 cups pecans
  2. 1/4 cup cocoa powder
  3. 2 tbsp coconut fat
  4. 1/4 cup maple syrup (only the good stuff)
  5. 1 tsp vanilla extract
  6. 1/2 tsp salt
Mousse
  1. 3 avocados
  2. 1/3 cup unsweetened almond milk
  3. 2/3 cup maple syrup
  4. 1 tbsp smooth peanut butter
  5. 1/4 tsp salt
  6. 1 tsp vanilla extract
  7. 1.25 cup chocolate chips
  8. 1/4 cup cocoa powder
For the crust
  1. Grease up a round pan and put some parchment paper as a lining
  2. Throw the pecans into a food processor and use until the pecans are crumbly
  3. Put the rest of the CRUST ingredients in and mix until just combined
  4. Scoop the mixture onto the parchment paper/pan and press down to make even
  5. Put in the freezer
For the mousse
  1. Scoop out your avocado flesh
  2. Put all mousse ingredients except for the chocolate chips into the food processor
  3. Process all ingredients until it looks smooth
  4. Melt the chocolate chips in microwave
  5. Put the chocolate chips into the food processor and process until smooth once more
  6. Take the crust out of the freezer and spread the mousse on top of it
  7. Place into freezer for at least 1.5 hours
  8. Once you take it out of the freezer, let it rest for five minutes before consuming

See? Easy! And trust me, it’s worth wait. Make sure you distract yourself during the wait while it freezes so you don’t go ruining it! This recipe is full of healthy fats and shouldn’t leave you with a whole lot of guilt. It’s also great to have over a long period of time since it saves well in the freezer. You can play around with it by using different nuts or different kinds of chocolate chips. The higher ingredient quality, the better it will turn out! Make this recipe to stay hungry and fit!
