Oatmeal Protein “Cookies”

Don’t you just feel like baking sometimes? The spur of creativity churning in the belly alongside the yearning to eat something delicious? I hear you and I hear that calling. Baking oftentimes contains buttery sugary goodness–but it doesn’t have to! If I don’t adhere to my normal 5:30am wake-up call, sometimes I feel rushed in the morning. That’s why when I saw The Buttercream‘s recipe, I was inspired to create my own oatmeal protein cookies to shove down my gullet in the morning (or any time of day). This recipe is ridiculously easy and the only sugar involved is from the honey! Healthy, quick, and delicious–three words that are wonderful together.

Oatmeal Protein "Cookies"

Ingredients
  1. 1/4 cup peanut butter
  2. 1-2 scoops of protein powder (any flavor)
  3. 2-3 tsp honey
  4. 2 cups oats
  5. 2 bananas
Instructions
  1. Pre-heat oven to 350 degrees F and grease up a baking sheet
  2. Mash bananas to a pulp
  3. Whisk in peanut butter
  4. Add the oats and protein powder and really mix it all together
  5. Add the honey and do a final mix
  6. Put in oven for 8-10 minutes
Notes
  1. Feel free to throw anything in like dried fruit, fresh fruit, or chocolate chips!

Look simple enough? Well, that’s because it is! I threw this together last night on a whim in a very casual manner. It’s easy and guilt-free. The peanut butter and banana bring out a wonderful flavor and I love the texture of the oats within it. Perfect for summer lovin’! I’m nervous how fast these will go.     I made a batch today. It was soooo easy and I always have all the ingredients on hand. Best part — they tasted good, too. 🙂 I love that they are so healthy, so I can eat the batter, before or after cooking, without guilt. Thanks, Fit!
