Indian Tofu Mushroom Curry

I don’t know about you, but Hungry and I love Indian food: the flavors, the different textures,  the unique combinations. In fact, it’s our most often ordered “take-out” or “take-away” as they say in New Zealand. What better to fill a grumbling tummy than a beautiful heaping plate of curry, rice, and naan? I’m drooling just thinking about it. SO when we had a block of tofu that needed using, I decided to go with an Indian style dish. It’s easy, it’s delicious, it’s nutritious: our favorite three. We hope you enjoy this Indian Tofu Mushroom Curry–inspired by Honest Cooking.

Indian Tofu Mushroom Curry

Ingredients
  1. 1 block tofu
  2. 1 case mushroom
  3. 3 tbsp oil
  4. 1/2 onion
  5. 1 tsp dried basil
  6. 1 tsp garam masala
  7. 1 tsp cumin powder
  8. 1 tsp curry powder
  9. 1 garlic clove
  10. 1 tomato
Instructions
  1. Cube your tofu
  2. Chop your vegetables
  3. Heat up 2 tbsp olive oil (medium heat) and throw in the tofu
  4. Cook tofu until light golden on the outside and it is a crispy outside and then set aside
  5. Oil the pan again, add in the onion and mushroom and cook
  6. Add the garlic, curry powder, cumin powder, garam masala, basil
  7. Mix in the tofu and let cook
  8. Finally, add the tofu back into the pan and make sure it is coated. You can leave it in the pan for as long as you'd like
  9. Serves well over rice

There you have it–I told you it wouldn’t be too hard. This is a dish you can leave on the burner for awhile and go do something else. It’s great for the family or just for you for the week. The tofu and mushroom offer protein and the dish as a whole is balanced with fats and carbs as well. Also, obviously–vegetarian! Make this recipe to stay hungry and fit!
