Tomato Avocado Salad
In the past few weeks, Hungry and I have kicked up our fitness level to a certain degree. It’s been going fairly well, and we are a mission to achieve our goals and stay healthy! It’s not always easy. We have busy lives, a not-so-great neighborhood, and everyday troubles. However, we rise above and keep fighting for our passion! To go along with that are healthy recipes. Recently, our fridge and pantry have been chock full with delicious fruits and veggies. We’ve been getting great prices on avocados from Trader Joe’s which we’ve been certainly using to our advantage. We’ve been making different things like caprese salads, roasted tomato on toast, and yummy spinach recipes too. In this case, I simply combined a few ingredients to create something very tasty: a tomato avocado salad.
- 1 tomato
- 1 avocado
- 5 basil leaves
- 1/2 tsp salt (I used balsamic salt)
- 1.5 tsp balsamic nectar
- optional: some sort of cheese (we used parmesan)
- Chop everything up into semi bite-sized pieces (chop up the basil smaller)
- Mix the avocado, tomato, and basil in a bowl
- Sprinkle the salt over
- Toss with the balsamic nectar
- Stir it all around and enjoy
- Feel free to double the recipe for more!
It’s extraordinary simple, easy, and good to your body. You will be savoring each bite (I actually licked the bowl after–don’t tell mum), but you also won’t feel guilty afterwards. It’s nourishing food that will make you and your body feel happy. You can of course double up on the recipe if you are feed more than you and a friend. It is definitely a crowd-pleaser–great for a side dish to bring over to a friend’s for tea or brunch. Try this recipe to stay hungry and fit!
