Last-Second Valentine’s Day [Healthy] Treat

You have a busy life, a busy schedule, or maybe you just forgot. Well, it’s Valentine’s Day today, so if there’s someone special in your life, you should make sure that they know you feel that way about them. If you didn’t get them anything (don’t fret, there’s still time)–or if you want to do a little something extra–you’re in good hands! I was inspired by Life with spices to make a healthy version of a “red velvet mug cake” just in time for V-Day. Even if you’re not romantic, this will put a smile on your partner’s face. Plus, even though it seems decadent and delicious, it actually has decent ingredients! Gotta love guilt-free baked goods. This takes, all in all, four minutes. No oven, just microwave. NO EXCUSES. Let’s hit it.

Healthy Valentine's Mug Cake

For the Cake
  1. 4 tbsp whole-wheat flour
  2. 2 tbsp white sugar
  3. 1/2 tbsp cocoa powder
  4. 2 tbsp olive oil
  5. 1/8 tsp baking powder
  6. 2 tbsp milk (more if you want it wetter)
  7. red food coloring or red sprinkles
For the Icing
  1. 1/2 tbsp butter
  2. 1/2 tbsp confectionery sugar
Instructions
  1. Mix all together in a bowl
  2. Move to a microwavable mug and put in for 2 minutes
  3. Put sprinkles on top, let cool
  4. Melt butter for icing, stir in the sugar
  5. Once cool, put the icing and more sprinkles on

Like I said earlier, this recipe took me literally four minutes. All you need are a few ingredients, a mug, and a stirring utensil, and you’re good! You don’t even need an oven! You could make it as a surprise sweet breakfast, or pretend you’re making afternoon tea and come out with this in your hand! I’m not a huge chocolate cake fan, but I had more than a few bites of this recipe. Here at Hungry and Fit, we’re not very mushy gushy. However, we still believe it’s important to make each other feel loved and special. This is a cute little surprise just to show you care and you’re thinking about your special someone. Enjoy!
